Honor Roll Sushi

"Great food should be a feast for the eyes, as well as the stomach." --Japanese Proverb.
This is the philosophy on which Honor Roll Sushi is centered around.
I first began preparing sushi in the summer of 1987 in Jackson, Wyoming, at a restaurant called The Lame Duck. Although "The Duck" was not a traditional sushi bar,(specializing in wok-cooking) the sushi techniques I learned there, were invaluable and laid the foundation for the artful sushi I strive to create daily. In 1991, I was promoted to sous Chef and held that position until the restaurant sold in 1999. I was sad to see it go after twelve years. Things change, and with the selling of "The Duck" and my diminishing tolerance for -20 winter weather, I returned to Boise and began working for a five-star hotel. After eleven months of jumping through hoops and working longs hours for a menial salary, I decided to open Honor Roll Sushi. Sometimes, it takes a kick in the *ahem* to get you motivated..
