Phun Pholding Phyllo
Phun Pholding Phyllo is a special class to explore basic cooking techniques with phyllo dough. Learn how to use this marvelous food product to make some wonderful appetizers and desserts. Walk away with recipes and the know-how to do almost anything with phyllo. In class we will prepare: spanikopita (Greek cheese pies), Moroccan style meat pies, and an Armenian variation on baklava (it's easier to make and tastes better).

Harry Kaiserian of K's Kwisine and Penobscot School's Italian chef will conduct this special class for a limited number of students on October 6th from 10:00 AM to 2:00 PM at the Penobscot School in Rockland. The course fee is $45. Preregistration is required.

Spanish Cooking October 13, 10AM-2PM
Recipes from Argentina and Spain: tapas and empanadas. Hands on class; bring your apron and your appetite. Fee of $45 includes meal. Instructor: Estela Otero, born in New York City to Spanish and Argentine parents, is a professional caterer. Now relocated to Midcoast Maine, her catering business, Edible Art, focuses on fresh ingredients and the creative preparation and display of food.

Asian Fusion Cooking December 1, 10AM-2PM
Explores Korean, Chinese and Japanese cuisines and techniques. Participants will prepare a complete meal combining the 3 related cultures and including recipes for:
From Korea: bulgogi, kimchi, poached pears
From Japan: cucumber pickle, spinach salad
From China: velvet corn soup, almond snow and beef and broccoli.
