Part 1 of this 2-week series class.  In this class you will be learning butchering techniques.  Class runs from 9:00 am - 11:00 am.

 

NOTE:  PRICE INCLUDES BOTH WEEKS.

 

Class Description:

The Art of Butchering Poultry, Beef Top Sirloin, Pork Loin and/or Pork Tenderloin

Chicken - learn how a chef breaks down a whole chicken into fabricated parts:

Cut a chicken into eight pieces for roasting, frying, grilling, barbecue or braising

Fabricate the following cuts for poultry:

-          Cutting a Statler Chicken Breast

-          Boneless drumsticks for stuffing

-          Boneless thighs for a Ballotine

-          Creating a double lobe breast for stuffing

-          Cutting a boneless breast for sauté or roasting

Beef - learn to breakdown a top sirloin of beef into 3 sections for roasting, grilling, broiling, pan searing & braising

Pork - learn how to butterfly a whole pork loin or boneless pork tenderloin for creating a stuffed spiral roll for roasting and barbecuing
