Chef Hofferts Bio

            For over 18 years Chef Hoffert has been dedicated to the arena of culinary arts through his trend setting applications and creativity. Chef Hoffert’s recognized talents acquired through his degrees in culinary arts and social science puts him on an incredible platform as one of Tallahassee’s young executive chefs. At the young age of 19 years old Chef Hoffert was a sought after chef, serving celebrities, athletes, governors and international dignitaries. Chef Hoffert then relocated to the panhandle to revitalize the culinary flame by becoming a renowned chef/owner of “Vintage Gourmet”, His establishment not only through wine, food & gourmet market set the par of 5 star cuisine in the panhandle. Today restaurateurs, foods to go market, specialty wine shops & catering facilities are succeeding on the plateau that Chef Hoffert created.

            Chef Hoffert’s unique dinning establishment landed him the opportunity to become a recognized media chef throughout this northwest Florida coastline. Destination icons such as LuLu’s owned by Lucy Buffet and Seville Quarter, Pensacola’s oldest dinning & entertainment complex and many more consulted with Chef Hoffert to develop inspiring cuisine.

            Currently Chef Hoffert is climbing the media ladder through his public culinary education entertainment, television and radio appearances. All the while furthermore embedding him in the Pensacola community through fundraisers & and community support services. Chef Hoffert continues to support and lead the culinary arena in northwest Florida.

            In 2009 Chef Hoffert received a position as Operations Manager for Food and Nutrition at West Florida Hospital. An all private room facility with a 5 star approach to Healthcare where he is currently extending his culinary talent to the broader horizon of patient care and promotion of a healthy life style.

While Chef Hoffert is pursuing his culinary achievements, he is focusing on future endeavors and is currently working on his new cookbook and developing “All Sauce”.

Mark Murphy Chef Biography

Chef Mark Murphy comes from a long line of strong southern cooks. He brings this familiar influence along with his artistic talent and creativity to the table when creating his dishes. After line cooking when he was young in Pensacola, Mark attended culinary school at Johnson and Wales University at both the Charleston, SC, and Providence, RI, campuses. Recently mark returned to the McGuire’s management team as Chef at Flounder’s Chowder House on beautiful Pensacola Beach. He brings his experience with creative control and high quality dishes to their successful family of local restaurants.
Before joining the team of Chefs at Flounders Chowder House in 2009, Mark had a long history in some of Pensacola’s greatest restaurants. He was the Executive Chef at Madison’s Diner from 2006 – 2009, the Chef de Cuisine for eight years during the Fish House’s most formative times, and a kitchen manager at McGuire’s Irish Pub shortly after returning to Pensacola.
Chef Murphy has appeared on the local cooking show sponsored by ESP, “Coastal Cooking,” several times. He has participated in several community events such as the chef’s tent at the Seafood Festival, the Women’s Expo, and the WSRE Food and Wine Classic. In 2008, he was hand selected by Chef Jacques Pepin as best in his regional category and Best in Show at the Food and Wine Classic.

History

 

Blake and Amber Rushing, a husband and wife culinary team, originally met at Jackson’s Restaurantin 2004 where Amber had been the Pastry chef and baker for one and a half years. They quickly fell in love and moved to London, England to work at the Savoy Grill under Chef Gordon Ramsay.

After two and a half years at the Savoy, they were invited to help open Ramsay’s first US restaurant in NYC. Blake was the Sous chef and Amber was Junior sous chef- pastry, where she worked under the extremely strict and talented Alastair Wise. Amber learned chocolate and sugar work, usually a specified segment of pastry, and Blake helped organize a full kitchen, kitchen staff, and banqueting facility. In 2007, Gordon Ramsay at the London, NYC earned two Michelin stars in less than one year after opening, which is very rare for the Michelin rating system.

After this, it was time to move from the Gordon Ramsay company to Lumiere in Vancouver, BC; one of the top restaurants in all of Canada to assist with getting the restaurant ready for chef Daniel Boulud to take it over.  Working in such a calm environment taught them the more social and emotional aspects of being a good chef. Positivity behind the scenes in a restaurant makes for a more positive experience for the guests. Simply, happy chefs make happy food. Finding true happiness in the kitchen has brought them back to the place their travels began, Pensacola, Florida!

Chef Panita Boonyathee Pearson

Panita first learned Thai cooking as a child in the seaside village of Thamai in Chanthaburi, Thailand where her mother was a chef famous for her Hua Mok, fish cake. She was grating coconut, pounding curry paste and cooking rice at a very young age.  By age 13, she was shopping for the restaurant at the local markets early each morning before school and training as a sous-chef in the family restaurant on the week-ends.  Over the next several years, she took on the responsibilities of head chef preparing a wide range of traditional Thai dishes with a special emphasis on dishes prepared with the rich bounty of seafood brought in by local fisherman.
In 1996, after graduating from the Chulalongkron University in Bangkok, she received a scholarship to teach Thai and Thai culture at the Buddhist Center of Dallas, TX.   Panita brought along a mortar and pestle and filled her kitchen with Thai herbs and spices.  Soon, friends started asking her for Thai cooking lessons.  As word of her culinary delights spread, she became a private chef for many prominent families in Dallas and Fort Worth.
Panita visits Thailand often to collect and preserve recipes from her family and her hometown. She leads culinary trips to Thailand where she teams with local Thai chefs so Westerners can experience Thai food and culture in Bangkok, Rayong, Ayuthaya, Nakron Sawan, Chiang Mai, Krabi, and Phuket.
Panita also caters private parties and offers private Thai cooking lessons in home kitchens with menus revolving around fresh, seasonal ingredients from local markets.  Teaching cooking, she discovered, allows her the opportunity to share her skills and experiences along with the laughter and excitement of each culinary result.
