Sweet & Savory Crepes

Our Dean of Deliciousness (and an excellent culinary instructor), Rachel Ciordas, has mentioned several times that she would “LOVE to teach a crepes class.” So we’ll make them savory and sweet; for breakfast, lunch, dinner, dessert, appetizer, snack … you name it. They really are simple to make and fun to eat.

Rachel’s enthusiasm is contagious and her classes are interactive, fun and very popular! You’ll be “flippin” for the ever-tasty and versatile crepes you’ll learn how to make today. Rachel will discuss crepe-making equipment and teach us two different crepe batters – one that uses white flour and the traditional Breton Crepe made with buckwheat flour.

There are probably hundreds of ways to use crepes and a million different fillings, toppings and sauces! We’ll learn several great recipes as we learn to make:

  • Savory Crepes Madame
  • Crepes with Homemade Chocolate Hazelnut Spread and Bananas
  • and an easy but very impressive "Crepe Cake”

We'll also discuss Blintzes - both savory and sweet!

It’ll be a flippin’ fantastic day in the kitchen!

Can something be decadent AND wholesome? “You bet!” says culinary instructor Katie Newell. Katie is a “lover of good food” who is passionate about her health. She has learned that fresh and organic food can be healing and, if prepared correctly … even tastier than the processed junk.

Katie is back in our kitchen today to share some very tasty sweets recipes that you’ll help to make because we learn best by doing! These are real treasures that (hint, hint) would make excellent Valentine’s Day gifts to make for your sweetie next week!

Katie takes us through the recipes, step-by-step, answering your questions along the way and providing the WHY behind all of her ingredient choices.

You’ll learn to make Katie's Lemon Cherry Olive Oil Cupcakes, moist little muffins packed with heart-healthy fats and healing whole grains.

She’ll also demonstrate her Real Sugar Cookie Dough (made with real butter, not that other stuff) and you’ll have fun rolling it out, cutting heart shapes and decorating these gems with Pink “Dye-Free” Frosting. Katie will show us several natural foods that can be used to color frosting without chemicals!

The piece de resistance … Peppermint Bon Bons, made with organic powdered sugar, real butter, cream cheese, and dipped in dark chocolate!

Of course you’ll be sampling all of these delights and, guess what, you’ll get to take some home to share with your family, too! It’s a decadently delicious day in the kitchen!

Chef Richard is the chef who actually designed the menus and dishes themselves for the original Plaza III, Fedora’s, and Bristol on the Country Club Plaza among many other legendary restaurants.

That’s right … he’s bringing back your favorite treasured recipes … yours to remember, savor and, best of all … recreate at home – because you’ll be taking all the recipes back to your own kitchen.

Tonight’s 6-course dinner brings back classic dishes from restaurant legends starting with Plaza III’s Award-Winning Steak Soup and Champignon Magique (the Original Crabmeat-Stuffed Mushrooms).

The Bristol received accolades including the Silver Spoon and Top Restaurant awards under Chef Richard’s guidance due to incredible recipes like tonight’s Sliced Tomato Salad with Black Pepper Vinaigrette and Pan Sauteed Lemon Sole with Lemon Parsley Butter.

With Chef Richard at the helm, Fedora’s was celebrated as one of the Top 10 Bistros in America and it’s easy to see why with dishes like tonight’s Pan Sauteed Chicken Saltimbocca with Sage Glaze and Sauteed Spaghetti Squash.

We are getting more and more requests for gluten-free cooking classes. It seems that many of you are trying to maintain a gluten-free diet due to gluten intolerance, celiac disease, wheat allergies, or for other health reasons.

Chef Gerd Pauli does quite a bit of gluten-free baking and cooking and has much to bring to the table with regard to educating others about the foods that they eat. This evening you’ll be putting on an apron and doing some cooking alongside Chef Gerd as you learn to make some of his very favorite gluten-free baked goods including ...

  • fruit crisp
  • chocolatey brownies
  • flavorful muffins
  • and ... a quick and delicious way to create Homemade Croutons to add to your soups or salads!

Techniques and great recipes will flow:

Dora & Diego and the Great Chocolate Adventure!

Here’s another very fun and very new class for our littlest chefs and their adult cooking partners! Join Dora, Diego, Boots and the whole gang as they try to outsmart that sneaky fox, Swiper in our Great Chocolate Adventure!

The kids will help Dora find the big treasure (a special tot-sized gift for your little one to take home!) by following clues and whipping up some yummy chocolate treats including Tricky Dessert Tacos (you didn’t think tacos were just meat and cheese, did you?).

Dora also needs our little chefs to help decorate some Chocolate Cake Pops with dipping chocolate and lots of sprinkles!

Dora’s abuela shared her special recipe for real Mexican Hot Chocolate and we’ll learn a fun hot chocolate song that makes it taste “excellente!”

As always with our Tiny Tots classes, we’ll keep it lively and fresh (so nobody nods off!) and you’ll see that cooking together couldn’t be more fun. Bring your camera and join in the fun as we help Dora solve a chocolate-y mystery. Vamanos! (Tastings and Tot-Sized Gift)

When we met with Better Cheddar Store Manager, Lincoln Broadbooks, we knew we had found a kindred spirit who shared our “passion for the chiz.” A professed cheese lover (who also makes his own cheese!) Lincoln will “spread” (sorry) the love in this class.

This guy KNOWS his cheese as the Better Cheddar offers the largest selection of cheese in a four-state area as well as a large collection of artisanal American cheeses!

Lincoln is dedicated to educating the public about cheese and taking the “fear” out of navigating through a cheese store without glazing over! We’ll learn as we sample various cheeses and cheese recipes throughout the evening. Samplings will range from fresh cheeses like Le Roule and Chevre to semi-hard cheeses like Gouda and Ossau Iraty and hard cheeses including Piave Vecchio. And, of course, we'll sample some blue cheese as well!

We’ll also learn how to make (and sample!) an incredible fondue.

Appetizer boards, the final cheese course, accompaniments, serving temps, how to make your own cheese … we’ll cover it all.

We’re channeling some Suave Frank tonight with a side of Debonair Dino as the CCKC will be swingin’ with the sounds of clinking martini glasses and music from the Rat Pack era.

That’s right my friends, we’re stepping back in time to the glory days when glamour and glitz ruled “The Strip.” Get ready for a classic evening full of understated retro romance as we roll out the red carpet to celebrate L.O.V.E. – Vegas Style!

The menu that our “Love Chef” Executive Chef Matt Chatfield has designed for you tonight is authentic “Lady Luck” fare that would make the “chairman of the board” sing:

  • Organic Baby Greens with Port-Poached Pears, Prosciutto and Candied Pecans

Making your own fresh soup is a GREAT way to increase your veggie intake, add some variety to your meals, get maximum nutrition from whole foods and avoid those dreaded preservatives, extra sodium and other additives that canned soups are full of.

Today we’ll learn how to UP the health intake as we learn to make gluten-free soups. And to make it easy for you, we will use our handy dandy blender to make them. Soup in a blender? You bet! Nothing faster, easier and requiring less clean up than blender soups. Homemade blender soups have all the vitamins, minerals and active enzymes from the whole foods used to create them. And don’t worry … you can still get some crunchy goodness in the form of added bits of veggies or fruits if you desire.

Culinary instructor Sherree Ross has been making her own blender soups for years and has much to share about the equipment, ingredients, prepping and seasoning that go into creating some delicious soups. Tonight, you'll not only learn to make gnocchi – those heavenly little potato dumplings that melt in your mouth – you'll also learn some sweet and savory variations as well as some accompanying sauces.

Here’s a class where the phrase “stuff it!” is not considered derogatory. In fact, it evokes images of soft pillows of pasta filled with flavorful combinations of meats, vegetables and cheeses.

Tonight you’ll learn the techniques of making stuffed pastas from Chef Cody Hogan (Lidia’s Kansas City) and you’ll get your hands in the flour as you learn.

You’ll soak in the knowledge as you discover the secrets to making Chef Cody’s Egg Dough. And you’ll learn step-by-step how to create Chef’s two favorite fillings:

The red grape of France’s Burgundy region, pinot noir grapes have been grown in France for more than 2000 years. California makes great ones, too!

Curious George and the Missing Bananas

That little mischievous monkey, Curious George, got into our kitchen last night and hid all of our bananas! We need all tiny chefs (and their adult cooking partners) to join our “Banana Safari” as we search high and low for those lovely yellow fruits so we can use them today in our cooking class!

It’s is a great day to spend time with your child, grandchild, niece or nephew here in our kitchen where you will create some wonderful memories (and photo ops!), while your budding chef starts on the road to learning important kitchen and life skills.

They will learn ...

  • how to follow instructions as they stir and whisk and crack an egg
  • how to cut some fruit (using very kid-friendly knives!)
  • how rewarding it is to eat something they’ve made with their own two hands!

We keep it simple, engaging and interactive so nobody nods off or gets bored.

Rise & Shine! It’s Breakfast Time

Get up you sleepy heads! It’s time to learn how to cook breakfast at The Culinary Center of Kansas City! Our Lil’ Kids classes offer a unique cooking experience for children (and their adult cooking partners) to learn new culinary techniques; important kitchen safety skills; and delicious, kid-friendly recipes that are easy to recreate at home. It’s hands-on all the way, too … offering the ultimate interactive learning experience for kids and adults alike!

This morning we’ll learn how to make some kid-friendly breakfast dishes from culinary instructor Margo Mikkelson.

Working as cooking teams, we’ll learn how to make Stick Stacks … delicious mini pancakes on skewers with cut-up fruit, dipped in syrup (these are real kid pleasers!).

We’ll also learn how to measure, whisk, mix and crack eggs as we whip up a batch of Breakfast Cookies – a healthy, easy, make-ahead morning treat featuring whole-grain cereal flakes and whole-grain pastry flour.

We’ll need something to drink, too, so let’s learn all about different milks and how to make a breakfast smoothie that everyone will love!

These yummy recipes will no doubt become some of your family favorites! Bring your camera to capture some treasured moments! (Tasting)

The Top 10 winners will be announced on Monday March 5, 2012 via email and featured on our blog and social marketing sites as well as in our upcoming cookbook. Every contestant, regardless of whether they are a top 10 winner, will receive a culinary gift from The Culinary Center of Kansas City after they go through the judging process on March 3rd. 

It’s easy as apple pie (get it?):

  • Register online here by clicking this class and paying the $10 registration fee for each recipe submitted. The deadline for registration is midnight Feb. 29th, 2012.
  • ONLY REGISTERED PARTICIPANTS WILL BE ALLOWED TO COMPETE ON MARCH 3RD.
  • Show up with your prepared dish in hand (plus 5 typed copies of your recipe) at The Culinary Center of Kansas City on Saturday, March 3rd, 2012 anytime between 2:00-5:00 p.m. where you and your dessert entry will face a panel of judges. You will have 5 minutes to set up your dessert on a judging table before the judges begin their judging process.  

Get ready. Get set. Channel Martha or Paula if you will … and let’s get baking!

The Fine Print:

  • There is a $10 registration fee per entry to participate in this contest. (In other words, if you bring 3 desserts, the entry fee would be $30.)
  • Dessert must be entered in the name of the person who made the dessert and that person must show up with their entry on March 3, 2012. 
  • Contestants must be 12 and older. Please be prepared to present a picture ID which shows your birth date upon arrival for the contest on March 3rd.
  • All contestants must bring a picture ID to the contest on March 3rd. No entry will be judged without this picture ID.
  • Every contestant will receive a free culinary gift upon their completion of the contest at The Culinary Center of Kansas City on March 3, 2012.
  • There is no limit to how many entries you may submit although each entry requires a $10 registration fee.
  • There will be no refunds made for the $10 registration fee.
  • The Culinary Center of Kansas City reserves the right to decide whether a particular dish fits within the “Desserts” category. If it is deemed that the dish does not fit into the category, no refund of the $10 registration fee will be given. 
  • Each judge will assign a numerical value (1-10) in each of three categories: creativity, flavor and presentation … without consultation with other judges.  The dessert receiving the highest total numerical value will be awarded the Grand Prize of First Place. In the case of a tie, the judges will judge those specific desserts again.  
  • Each contestant must be prepared to leave their dessert and the container it was brought in/on at The Culinary Center of Kansas City after judging. Please do not bring your dessert in/on something valuable or treasured as you will not be getting that container back. 
  • Each contestant, when they register, warrants that the dish brought in was, in fact, made by them and that the recipe is theirs alone. Any recipe that is found to be confusingly similar to a published recipe or one that is otherwise found to be owned by another or that is found to not be made by the contestant, will be disqualified. No refund of the $10 entry fee will be given.
  • Each contestant also grants to The Culinary Center of Kansas City the right to reprint their recipe and use any photographs or video taken of contestant and/or dessert entry in any materials, marketing or otherwise, both printed and online.

This is the real deal folks! The local farmstead cheesemakers from “Green Dirt Farm” are here to share the science and art behind the cheese-making process in this 4-hour, info-packed, half-day Artisanal Cheese-Making Workshop!

Green Dirt Farm is a family-owned farm located in Weston, Missouri that is dedicated to bringing the best 100% grass-fed lamb and farmstead sheep’s milk cheeses to our community!

From these experts, you’ll learn how to create handcrafted cheeses made in the style of traditional French farmhouse cheeses.

Today is the day you’ll garner all the necessary skills and knowledge you’ll need for making your own cheeses at home!

Highlights of today's Cheese-Making Workshop include:

  • overview of cheeses and how to make them
  • discussion on cheese-making equipment
  • various cheeses sampled throughout the day

Give us one day and we’ll turn you into a “smoke master!” This is the ULTIMATE backyard smoking class! Cut years off the ole’ learning curve and show those neighbors and family members who “be” the “Boss of Smoke,” the “Ribmaster,” the “Nobody-Can-Touch-This!” King of BBQ!!

Roll in your own smoker and work alongside the master himself, Chef Richard McPeake, in a full-day student participation class from start to finish. Our goal is that each student will go home with complete confidence to cook absolutely great barbecue!

You’ll receive significant one-on-one instruction from Chef Richard (a 30+ year BBQ veteran and 30-year professional chef) as well as Bruce Campbell (a 12+ year BBQ veteran and restaurant industry professional) with the goal of helping you get the most from your own equipment.
