Meet the Chef: Pierre Ferland - Mille Feuille
 

In this class you will learn how to prepare mille feuille (i.e. a thousand leaves, aka puff pastry). Since making the dough takes more than 2 hours, you will roll out dough that Chef Pierre has prepared ahead of time, bake, make pastry cream, and assemble a dessert masterpiece to eat in class or take home.

Pristine Greens – Take your salad skills to another level.

Chef Sean will introduce 4 unique salads, one for each season with a strong focus on seasoning, flavor development, and procurement. Salads are far too often an after thought, we are here to bring them to the forefront. Outside of their utility as a side dish, a great salad can be the focal point of a light dinner or feature as a satisfying lunch. This class will expand the way you think about building a salad and how you think about balance in a dish. A good salad needs a crunch, we will discuss different ideas for bringing more delicious crunch into your life. You will never need to buy another store-bought dressing; after this class, you will access the skill to make fantastic vinaigrettes and rich emulsions.
