Chili and Cheese Stuffed Poblano Peppers -  Poblanos are a milder pepper that is great for stuffing and grilling.  Filled with Chili and Cheese, these are amazing appetizers!

Fresh Seafood Cocktail - Shrimp, Scallop and Crab, in a refreshing tomato-clamato juice/sauce (Chef Rene's Recipe)

Southwestern Spiced Grilled Chicken - Warm southwestern spices, but not hot.  Marinated and then grilled. 

Lime Scented Cilantro Rice - Perfect side dish for most any dish, but really good with grilled meats.

If you have never made or eaten fresh pasta, you are in for quite a treat. Making it can be a group event and really fun. Fresh pasta is delicate and has a richer texture than dry packaged pasta. You will learn to make the basic dough and use a pasta machine to work and shape it.

Look for this new series of hands-on classes for those of us who want to eat well but don’t have much time or energy to spend in the kitchen. Faster Than Take-out is just that; easy, fast and delicious meals that you can have on the table in minutes.

Of course you can make enough to share, but these recipes have been designed for those of us who want to eat well without being too fussy. Fast, Easy and Delicious is the name of the game.

TODAY'S MENU

Seared Shrimp with Caper Butter - This dish is all about technique. A fabulous main course is ready in just a few minutes.

Shrimp Stock - There is flavor and nutrition in the shrimp shells. Learn to make a stock and various ways to use it.

Rice Pilaf - Once you learn about pilaf, you may never buy the boxed stuff again.

Sautéed Summer Vegetables - A mix of the best of the season and how to use leftovers (if there are any).

Steakhouses serve large portions of hearty, filling heartland food that is focused on meat and potatoes. We offer simple and elegant recipes for two chefs cooking together with the aim of turning the routine daily task of making dinner into a relaxing and romantic bonding experience for two.

These recipes are designed for busy working couples who find themselves with limited time for just about everything – including preparing dinner and for spending quality moments with each other.

We will use our skills to make Ratatouille Pasta.  

Finally, learn how to use your knives and care for them!

This course is ideal for amateur cooks, regardless of how long you've been pursuing your hobby. The knife is the most basic of kitchen tools and certainly the most important. At the very least, the class will teach you how to work more efficiently. At most, you’ll be less likely to lose a digit.

In this informative and interactive class, Chef Dave will not only teach basic knife skills (what type of knife you need, how to hold your knife, how to protect and sharpen your knife), but also how to master various cutting techniques to make cooking easy, fast, and enjoyable. Each student will have the opportunity to test out what they learn and will also enjoy a meal of vegetable soup and gourmet panini.

In a previous hands on class we made Venetian (Northern Italian) style tapas called cicchetti. Now we are putting together a menu for your next cocktail or pot luck party.  Join us and put a little South in your mouth; Italian style.


Tonight's Menu
Marinated Olives -
The perfect food to pair with a cocktail or glass of wine. Olives heated through with herbs and citrus.

Pomodoro Insalata - Tomatoes meld together with their best friend, basil. This can be served as a first course, salad or lunch.

Crostate Di Tagliolini - Southern Italy is known for fritti, a fried snack. This is one of the best. A pasta crostata served at L.U.I.S.E. on the chic Piazza Dei Martiri.  These delicious cakes make a great antipasto or, serve it with a salad for dinner.

Crocchette di Patate - Potato Croquettes are always part of a Neapolitan fritto misto. They are light and flavored with fresh herbs and cheese.

Zeppole - A favorite street food with universal appeal. This is a fried yeast dough, sprinkled with sugar.

DOUGHNUT WORKSHOP

A doughnut - or donut - is a type of fried or baked dough confectionery or dessert food. The doughnut is popular in many countries and prepared in various forms as a sweet snack that can be homemade and embellished with ease. They are usually deep-fried from a flour dough, and typically either ring-shaped or without a hole and often filled. Other types of batters can also be used, and various toppings and flavorings are used for different types, such as sugar, chocolate, or maple glazing.

The two most common types are the toroidal ring doughnut and the filled doughnut, which is injected with fruit preserves, cream, custard, or other sweet fillings. A small spherical piece of dough may be cooked as a doughnut hole. Other shapes include rings, balls, and flattened spheres, as well as ear shapes and twists - the variations are almost endless. Doughnut varieties are also divided into cake and risen type doughnuts.

Now that we have the proper definition, we can now get into the real deal.  Let's fry and bake these babies and start eating amazing homemade creations.

TODAY'S CLASS

We will be using learning Chef Dave’s pizza dough recipe and then making your own calzone. 

Choose from grilled tomato sauce (we will make in class), Italian sausage, mozzarella cheese, red and green peppers, spinach leaves, onions and mushrooms to make your PERSONAL calzone. 

Then take out to the BGE to create the magic!  

We will also make a S'mores Calzone with Chocolate, Graham Cracker Crumbs and Marshmallows.

EggHead Instructor, Kasey Wright!  

Kasey has been "Egging" since he got his XL in 2012.  He has become very familiar with many different styles and methods of cooking on the egg over the past 9 years. Smoking everything from briskets and pork shoulders to chicken and ribs, he has gained valuable insights into what works and how to make the most flavorful barbecue possible.

Kasey and his wife moved to the area in 2015 and have made this area home enjoying the spectacular weather here that makes year-round barbecue an enjoyable time. When Kasey is not cooking he is spending his free time exploring the area with his wife and doing some golfing.

Most evenings you will find him out on his lanai firing up the Big Green Egg and experimenting with new items to cook on the egg. Many parties and gatherings have occurred at Kasey’s place with the egg as the centerpiece of the show.  He enjoys showing others how to use the egg and helping them master their skills so that they too can enjoy all the food the egg can cook.  He will often take care of the cooking for friends and family get-togethers and parties, and the results are always enjoyed by all the attendees.

Kasey welcomes you to his class and hopes that you both enjoy the time here as well as learn some valuable kills & techniques that you can use on YOUR BGE.

Join Robin and learn basic cake building and decorating skills.  This class is great for newbies; building confidence in creating a fun cake at home and for those who just need a refresher course in basic fundamental skills/techniques.  Bring a friend or two and enjoy!

Come learn to how to level, fill, stack, and ice your cake. Staff Instructor Robin will show you how to get a super smooth, crumb-free finish.  You will also learn how to assemble and fill a piping bag and then finish your cake with a gorgeous, whimsical design that will dazzle and delight your friends and family.

The techniques we show you are so user-friendly - you won’t believe how easy it is to create a professional looking masterpiece!  All of the tools you need, including the cake.

Chef Mitch's culinary point of view is the idea that basic fundamentals of cookery and practical ingredients can go a long way. Great ingredients prepared well make for a great dish.   A long list of ingredients and complex instructions don’t necessarily make for a great dish. Over complex recipes are too complex on the palette. Flavors get lost or covered up.

Sometimes the simplest food is the sexiest food.  "If its made with love, it tastes better".

Parents are welcome to stay and watch OR leave and return when class is over.  Students will NOT be allowed to leave the store WITHOUT A PARENT or GUARDIAN picking them up from INSIDE THE STORE! 

Each student will receive one portion of each dish prepared.  They are welcome to eat it in class, share it with their parent, or take it home.

Normally, you'd need lots of skill and years of practice to create beautiful buttercream flowers with detailed centers and delicate petals. As a guest at one or more RP Cooking Classes, I am sure you have noticed our wonderful Cooking Class Assistants.  These dedicated individuals come in one hour in advance of all classes, help the chefs prepare and set up, assist the chef during class, serve and assist you and do all the clean up.  We typically have 3-5 assistants at each class.  These ladies and gents do a great job of making sure you have everything you need and keep the chef in line too! 

We are accepting new assistants into the program.

Most of us have crazy schedules, family members coming/going and a short amount of time to cook. We need to learn the basics to be able to put a FAST and NUTRITIOUS meal on the table. Learning to cook so you can eat at home is cheaper, healthier AND allows for some much needed face-to-face time with the family.

 

These NEW classes, take into considerations time available to cook, semi-homemade grocery items and some "ready to assemble and cook" options.  We will still include techniques and skills that are a must-have in the kitchen; How to use a knife, how to use the oven, how to fry and/or saute and how to roast.  

 

Even experienced cooks can update their skills to accomplish the change in "Today's" cooking environment.  The goals of these classes are to focus on the techniques and skills needed to become a confident home cook.  View each day for specific skills and recipes.

 

Classes are created as stand-a-lone classes.  You do NOT need to take them in any order.  You may choose to take one or all classes as your calendar and skills dictate.

Most of us have crazy schedules, family members coming/going and a short amount of time to cook. We need to learn the basics to be able to put a FAST and NUTRITIOUS meal on the table. Learning to cook so you can eat at home is cheaper, healthier AND allows for some much needed face-to-face time with the family.

 

These NEW classes, take into considerations time available to cook, semi-homemade grocery items and some "ready to assemble and cook" options.  We will still include techniques and skills that are a must-have in the kitchen; How to use a knife, how to use the oven, how to fry and/or saute and how to roast.  

 

Even experienced cooks can update their skills to accomplish the change in "Today's" cooking environment.  The goals of these classes are to focus on the techniques and skills needed to become a confident home cook.  View each day for specific skills and recipes.

 

Classes are created as stand-a-lone classes.  You do NOT need to take them in any order.  You may choose to take one or all classes as your calendar and skills dictate. 

 

 

TECHNIQUES: Basic Mother Sauces
Learning to cook each of the five basic sauces that can then be "morphed" into hundreds of other sauces. 

Bechamel - white cream sauce

Veloute - white stock based sauce

Tomato - classic tomato base

Brown (Espangna) - beef or pork base sauce

Emulsion - egg based sauce

No worries!  Tonight's class is all about taking a few store-bought ingredients and making them into something special with not a lot of effort on your part.  There is no shame.  You are crazy busy.  You need a hand wherever you can. 

We will work together in small groups to prepare the recipes, discuss variations and enjoy them all together. 

Join us in this hands-on class of taking ingredients from a can, a box and a jar and making a real meal for your family and your friends.  After all, one of my favorite chefs, Ina Garten, The Barefoot Contessa says "Store Bought is Fine!" Couples cooking together is always fun and exciting.  This style class has a maximum of 12 guests.  We work in groups of four, each couple is paired with another couple as they work through the recipes.

Finally, learn how to use your knives and care for them!

This course is ideal for amateur cooks, regardless of how long you've been pursuing your hobby. The knife is the most basic of kitchen tools and certainly the most important. At the very least, the class will teach you how to work more efficiently. At most, you’ll be less likely to lose a digit.

In this informative and interactive class, Chef Dave will not only teach basic knife skills (what type of knife you need, how to hold your knife, how to protect and sharpen your knife), but also how to master various cutting techniques to make cooking easy, fast, and enjoyable. Each student will have the opportunity to test out what they learn and will also enjoy a meal of vegetable soup and gourmet panini.

Charmane's Story - s.a.l.t. sisters: Uncovering the Health Benefits of Unrefined Salt

Charmane Andrews Skillen, founder and CEO of s.a.l.t. sisters began on her health quest almost three decades ago. Through her effort to understand how to keep herself and her family healthy, she learned about the foundational importance of the food we consume on a daily basis. Along the way, Charmane developed a passion and love for cooking which ultimately led to a discovery that would change her life.

If you have never made or eaten fresh pasta, you are in for quite a treat. Making it can be a group event and really fun. Fresh pasta is delicate and has a richer texture than dry packaged pasta. You will learn to make the basic dough and use a pasta machine to work and shape it.

Georgia-born French-trained chef Virginia Willis has made cookies with Dwanye “The Rock” Johnson, foraged for berries in the Alaskan wilderness, harvested capers in Sicily, and beguiled celebrities such as Jane Fonda, Bill Clinton, and Aretha Franklin with her cooking -- but it all started in her grandmother’s country kitchen.

She is the author of Secrets of the Southern Table: A Food Lover’s Tour of the Global South; Lighten Up, Y’allBon Appétit, Y’allBasic to Brilliant, Y’all; Okra; and Grits. Lighten Up, Y’all received a James Beard Foundation Award. She was the TV kitchen director for Martha Stewart, Bobby Flay, and Nathalie Dupree and has traveled the world producing food stories – from making cheese in Sonoma to escargot farming in France. She is author of “Cooking with Virginia” for Southern Kitchen and Editor-at-Large for Southern Living.
