CHINESE TAKEAWAY

Chinese food is one of America’s favorite takeaway cuisines. But it is also quick and easy to make at home. We will start with handmade dumplings filled with a tasty mix of pork and crunchy water chestnuts. Just like modern Chinese families trying to work and still get a healthy meal on the table every evening, we will use pre-prepared dumpling wrappers.

Our minced chicken lettuce wraps may not be a traditional Chinese dish but the mix of chicken, mushroom, and hoisin have quickly made this one of the most popular Chinese menu items in America.

We will prepare a classic Canton Province dish of chicken in black bean sauce. Moist chicken, crunchy red bell peppers, and Chinese black beans combine in an umami rich stir fry dish served with white rice. If you’ve never tried a Chinese black bean stir fry take a chance on this one, it’s delicious!

As a counter balance to the richness of the chicken in black bean sauce, we will prepare a quick stir fry of crisp broccoli with Szechuan peppercorns and a light garlic sauce. The perfect way to enjoy broccoli.

And finally, dessert. Dessert for this class has absolutely no relationship at all to anything Chinese. But it is a great recipe to have for those times when you need a quick dessert and you realize that you are not a pastry chef today. It utilizes frozen fruit, handmade or store bought pie dough, and an almond filling that mixes up in less than 10 minutes to create a rustic free form galette or tart. We will use blackberries for our fruit and our pastry will be sprinkled with Demerara sugar to give the tart a little glisten and crunch.

Pennsylvania, Maine, Massachusetts, Virginia and New Hampshire all claim to be the birthplace of the whoopie pie. The Pennsylvania Dutch Convention & Visitors Bureau notes that the whoopie pie recipe comes from the area's Amish and Pennsylvania German culture. 

Labadie's Bakery in Lewiston, Maine has been making the confection since 1925. The now-defunct Berwick Cake Company of Roxbury, Massachusetts was selling "Whoopee Pies" as early as the 1920s, but officially branded the Whoopee Pie in 1928 to great success.

Various claims suggest that the whoopie pie originated in Massachusetts and spread both north and south, or that German immigrants in Pennsylvania brought the predecessor of the whoopie pie to communities throughout the northeast.

Regardless of the actual origin, whoopie pies have been a staple of American desserts and treats for nearly 100 years.  Though they fell out of vogue for many years, they are back and in a big way.

To accomplish all this in one class, students will divide into baking teams and make two different recipes. Every student will decorate and take home one of each of the six different cupcakes. Three of the cupcakes will be extensively doctored cake mix recipes (semi-homemade). The other three recipes are completely from scratch. All are delicious. You decide your favorites.


Unlike other decorating classes, WE supply everything you need to successfully complete this class.  You do not need to invest in any of the tools BEFORE you attend the class.  All you need is the will to learn and the desire to bake.  If you decide you want to get into cupcake baking and decorating, we do sell all of the tools and ingredients in our retail store.  Remember, students get a 10% off ALL retail items the day of class.

In this class, you will be introduced to a flower nail and different piping tips to create a variety of amazing flowers to decorate your cupcakes.  Learn how to prepare and fill a piping bag and be amazed at what you can learn in just one class.

WE ARE INCREASING MEMBERSHIP IN OUR COOKING CLASS ASSISTANT PROGRAM

As a guest at one or more RP Cooking Classes, I am sure you have noticed our wonderful Cooking Class Assistants.  These dedicated individuals come in one hour in advance of all classes, help the chefs prepare and set up, assist the chef during class, serve and assist you and do all the clean up.  We typically have 3-5 assistants at each class.  These ladies and gents do a great job of making sure you have everything you need and keep the chef in line too! 

We are accepting new assistants into the program.
If you are interested, check out the benefits and requirements of the program.  We would love to have you join us.

The word "paella" actually denotes the name of the pan used in making this traditional Spanish dish.  It is a rice dish is made with whatever is fresh in the market: seafood, chicken, pork, sausage, vegetables, etc.

In Spain, paella is usually prepared outdoors on warm spring and summer days and is served family style during the early afternoon.  Here in America, it has become a cornerstone of Spanish cuisine and is served for dinner all year round.

Just In Time for Fourth of July Celebrations!
RED VELVET CAKE


A Red Velvet Cake is also known as “Red Waldorf Cake” and is a layer cake that is bright red in color and has a very subtle chocolate flavor.  Most often you see it paired with a white fluffy frosting.  It originated around 1959 and can be seen in Brownies, Cookies, and Cakes in so many forms and varieties!  

It is known for its moist crumb with a slight tang,  It isn’t overly sweet, and has a light flavor of chocolate.  Most recipes in authentic versions of this cake include buttermilk or sour milk, baking soda mixed with vinegar, and red food coloring.   The vinegar and buttermilk react with the cocoa to give a red hue.  (This doesn’t happen today because of the way we process cocoa).  Without sufficient food coloring, the cake barely looks pink.

To Red Velvet Fans, the cake is comfort food at its best.  Celebrations like birthdays, Christmas, Fourth of July, and Valentine’s Day use this cake in spectacular fashion!  Its also very popular as a Wedding Cake.  

The movie “Steal Magnolias” featured a Red Velvet Cake shaped like an armadillo with Gray Frosting as a true symbol of southern hospitality...the Red Velvet Fan Club took it from there!  Southern Living Magazine says the Red Velvet Cake is its most requested recipe.

Chef Barbara Pugliese is a graduate and blue ribbon recipient in Culinary and Pastry Arts from Peter Kump's New York Cooking School, now known as the Institute of Culinary Education. 

With instruction you will learn the basic techniques of outlining, filling, flooding and decorating cookies.  In a short amount of time your cookies will look like works of art!

Unlike other decorating classes, WE supply all tools needed to successfully complete this class.  You do not need to invest in any of the tools BEFORE you attend the class.  All you need is the will to learn and the desire to decorate.  If you decide you want to get into cake/cookie decorating, we do sell all of the tools and ingredients in our retail store.  Remember, students get 10% off ALL retail items except BGE the day of class.

In this class you will learn how to make royal icing flowers that will last a long time.  You will make daises, primroses, apple blossoms, daffodils, pansies and roses! 

You will also learn to decorate a cake with Basket Weave and combine the two techniques together making a beautiful Birthday cake or for any occasion. 

Unlike other cake decorating classes, WE supply the cake and all tools needed to successfully complete this class.  You do not need to invest in any of the tools BEFORE you attend the class.  All you need is the will to learn and the desire to decorate.  If you decide you want to get into cake decorating, we do sell all of the tools and ingredients in our retail store.  Remember, students get 10% off ALL retail items the day of class, except for Big Green Egg merchandise. 


This is a HANDS-ON style class

Wine, beer, iced tea and coffee are included with this class.  Other wines by the bottle and the glass are available at an additional charge.
