CHEF'S BIO

Sharon moved to San Francisco for three years because she wanted to be a great cook and baker.  She finished her culinary training at a local home chef cooking school but went on to take professional classes at Tante Marie’s Cooking School.  It was both a culinary school and a pastry school and where she took numerous classes in both, but specialized her training in the pastry end.

She then returned to Pittsburgh where she started teaching full time as a Chef Educator at Bidwell Training Center’s Culinary School.  She was the lead educator demonstrating in a large class instruction setting.  Her team also cooked lunch for the 500+ students at the facility.

Sharon has taught at The Versatile Gourmet and ended up designing and supervising their adult education program.  She  continued teaching in her home and still does so when she returns to Pittsburgh.

Though she can teach anything in the culinary realm, her love is baking. Hopefully you will sign up to experience her teaching techniques and improve your skills.

DESTINATION DELICIOUS
AMERICAN DINER FOODS #1

DESTINATION DELICIOUS

AMERICAN DINER FOODS #1

Introducing a NEW recurring series of events in the RP Culinary Center on the last Friday of each month.

At these events we will create a gourmet meal from a DELICIOUS DESTINATION around the country and world.  Our focus will be on the region through the food they eat and enjoy.

Tonight, our destination is American diners.  They are a small quick food casual restaurant that is found in the Northeastern United States and Midwest, as well as in other parts of the US and Canada. Diners offer a wide range of foods, mostly American cuisine, and have a distinct exterior structure, a casual atmosphere, a long counter with bar stools where patrons eat their meals, and late operating hours. Diners frequently stay open 24 hours a day, especially in cities and towns with a busy bar scene or with factories with night shift workers.

Diners typically serve American food such as hamburgers, french fries, club sandwiches, and other simple, quickly cooked, and inexpensive fare. Much of the food is grilled, as early diners were based around a grill. Coffee is the ubiquitous beverage at diners, even if it is not always of high quality. Diners often serve hand-blended milkshakes and desserts such as pies, which are typically displayed in a glass case. Classic American diners often have an exterior layer of stainless steel siding—a feature unique to diner architecture.

Tonight's DELICIOUS DESTINATION Menu:

Red Chicken and Waffles with Maple Butter and Syrup

Seared Diner Meatloaf

Buttery Whipped Smooth Potatoes

Bacon Braised Green Beans

bouillabaisse

While mastering the 'classic dishes' (pulled pork, brisket, chicken, and ribs), Josh has developed some tasty BBQ-fusion dishes that folks in and around Florida just can’t seem to get enough of.

On most weekends Josh can often be found serving his food & teaching the new wave of ‘backyard cooks’ during appearances at meat markets, kitchen stores and specialty grill stores across the Sunshine State. "Latin Inspired Menu with a MasterChef"

Rolling Pin is pleased to welcome CHEF DANNY FLORES to the Culinary Center!

Chef Danny was born and raised in Lima, Peru, where at a very early age, he helped his grandmother in the kitchen of their local church. Helping to feed the less fortunate, Danny noticed food was a catalyst for community. After immigrating to the U.S. in the early 1990's, Danny began to bus tables and wash dishes at an international dining chain. Shortly after, he worked his way up to prep cook, line cook, and eventually, kitchen manager.

After several years of working in R&D/Supply Chain at Bloomin' Brands Inc., Danny launched his own business, the Holy Crepe! Food Truck. Since its inception, Holy Crepe! was featured on Food Network Magazine, The Tampa Bay Times, The Tampa Tribune, The TBT, Creative Loafing, BayNews 9, CNN Latino, amongst other blogs and publications.

Chef Danny was casted for season 5 of FOX's MasterChef, and most recently he was a top 40 semi-finalist on season 8. Currently, Danny is hosting private pop ups on www.EatWith.com/@masterchefdanny while also blogging for his website www.thekickchen.com.

Hope you can join us for our first of what will be many classes with Chef Danny.  His personality is infectious, food is amazing and you too can get to know his culinary journey.

SPANISH TAPAS

SPANISH TAPAS

What are Tapas?

Most people agree that tapas are bar bites, canapés or small plates that originate in Spain. But many don't realize that tapas come in many different forms and can vary greatly throughout Spain-- even from town to town! Still confused about what exactly tapas are? Read on!

In Spain, tapas can be practically anything-- from a chunk of tuna, a cocktail onion and an olive skewered on a long toothpick, to piping hot chorizo sausage served in a small clay dish, to a gourmet slow-cooked beef cheek served over a sweet potato puree - or anything in between. Tapas are served day in and day out in bars and cafés throughout Spain.

Though the concept of tapas does change throughout the country, they are so much a part of the culture and social scene that the Spanish people even use the verb tapear which means to go and eat tapas!

Tapas, Spanish small plates, perfect for a dinner of grazing and socializing!  This menu allows for conversation, interaction, and a good time, so sit back and enjoy!

AMERICAN DINER FOODS #2

DESTINATION DELICIOUS

AMERICAN DINER FOODS #2

Smoked Tomato Soupwith Gruyure Croutons

Benton's Bacon Weave BLT

Sunday Pot Roast with Potatoes and Carrots

Join us for a wonderful evening of learning, eating, and conversation with one of Rolling Pin's most beloved guest chefs...Virginia Willis!

As the daughter and granddaughter of consummate Southern cooks and a classically trained French chef, Virginia has a gift for giving French recipes a down-home Southern feel. Her acclaimed first book,  Bon Appetite, Y’all , is a passionate homage to her culinary roots. In her demonstration of the recipes from her new book,  Lighten Up, Y’all , Virginia will show you how to take a tasty basic recipe and transform it, via a technique, garnish, additional step, or short recipe, into a show stopper - without the guilt!

Georgia-born French-trained Chef Virginia Willis has cooked Lapin Normandie with Julia Child in France, prepared lunch for President Clinton, catered a bowling party for Jane Fonda, and harvested capers in the shadow of a smoldering volcano in Sicily -- but it all started in her grandmother’s country kitchen.

The Chicago Tribune praised her as one of "Seven Food Writers You Need to Know." She is the author of a number of cookbooks in addition to those mentioned previously. Her legion of fans love her knack for giving classic French cooking a down-home feel and reimagining Southern recipes en Français. She writes the popular comfort food blog called Down-Home Comfort that celebrates comfort food cooking for Food Network and the Cooking Channel. Her eponymous food blog receives rave reviews for her recipes and stories celebrating her unique culinary niche.

She is a contributing editor for Southern Living and her articles have appeared nationally including Food52 and CNN.com as well as Country Living, Fine Cooking, All-Recipes, and Eating Well. As a nationally recognized Southern food and beverage expert she has been featured in the Washington Post and USA Today as well as quoted in the New York Times and the Wall Street Journal.

She is the former TV kitchen director for Martha Stewart Living, Bobby Flay, and Nathalie Dupree. Virginia has appeared on Food Network's Chopped, Fox Family and Friends, Martha Stewart Living, Paula Deen's Best Dishes, and as a judge on Throwdown with Bobby Flay.
