In this class you will learn how to make the five mother sauces; Bechamel (white-cream base), Veloute (white-stock base), Espagnole (brown-stock base), Tomate (tomato base) and Hollandaise (egg-based emulsion).

Some of these sauces may seem unfamiliar; but they are the BASES for many popular sauces.  Mastering these great sauces will take your meat and potato dishes to a new level.

You’ll practice searing steak, creating a properly cooked risotto and making a surprisingly simple compound butter.

When it’s time for dessert, you’ll learn to whip egg whites and create a perfectly risen soufflé.
