~ About Seymour Dairy ~

Seymour Dairy, a fairly new blue cheese dairy and the brainchild of Mike Brennenstuhl, champion cheesemaker. Only five years old, Seymour Dairy has already won several awards, including a Gold Medal at the 2009 World Cheese Awards in Gran Canaria for its Crocker Hills Organic Blue.


Utilizing fine European craftsmanship with a modern flair, Seymour Dairy Crest offer distinctive blue veined cheese made from veteran cheese makers with an artisan eye for detail. The palette pleasing varieties available include Ader Kase, a German style similar to Cambozola or Montagnolo. Ader Kase Reserve, an aged Ader Kase with an earthy mushroom flavor; Blue Crest, a whole milk Danish – style Blue; Crocker Hills an Organic Blue with a fresh pasture-grazed flavor; and Green Crest, a creamy green veined dolce Gorgonzola.

Mike will share his knowledge and enthusiasm for his special blue cheese passion.

Willi Lehner has cheese making in his blood!  The son of Swiss immigrants, Willi learned the craft of cheese making by his father’s side.   
Early in his career he worked as a cheese maker in the Swiss Alps.  This opportunity to make cheese in a copper kettle over an open
flame gave him an appreciation for traditional methods as well as the confidence to experiment.  These qualities, combined with his
grasp of the connection between pastured cows and the highest quality cheese, have led to mouthwatering results!  He is a master at
harnessing the rich terrior of Southcentral Wisconsin.

Deep-rooted in his craft, as well as his lifestyle, He is a commitment to sustainability.  Hence his affinage cellar is underground, more closely
simulating natural cave conditions.  What little power it requires is provided by the solar and wind production on his property.
Willi is an enthusiastic supporter of the Slow Food movement and a lover of  high quality, nutrient dense food.
