COOKING UNDER PRESSURE--Mastering the Pressure Cooker
 

Pressure cooking is the greatest culinary comeback for making long simmered dishes in minutes. From soups to stews newly created pots for stove top and electric styles with fancy settings make long cooking dishes more accessible for the busy home cook. They are great for turning a tough but flavorful cut of meat into melting tenderness. Healthy grains and beans cook expeditiously fast. We will be using both a stove top and the Instant Pot® to make a Hungarian style chicken paprikash. Lentils with onion and preserved lemon. Belgium beef stew, and a silky cream of chicken soup. 

Ages 16 and up ok.--Class runs about 2 1/2 hours.

PERUVIAN--The Latest Hot Cuisine
 

Peruvian cuisine — has much to offer beyond that tasty rotisserie chicken. Boasting over 3,000 varieties of potatoes, 300 varieties of aji (chili) peppers, a multitude of seafood from the coast and highland meats of the Incan past are abundant. These indiginous ingredients have been supplemented with ingredients and flavors of Spanish conquerors, Europeans, Africans, and more recently Chinese and Japanese immigrants. Simply put Peruvian food is a global feast for the senses.

Tonight we’ll be making papa rellena--meat filled potato croquette with salsa criolla. Peruvian ceviche—fish marinated in 'leche de tigre"-- infused with red onions, chile, and cilantro; garnished with sweet potatoes, giant corn, and avocados. Traditional lomo saltado--a home-style beef stir fry with veggies and potatoes. We'll also be teaching you the secret to that spicy Aji verde--green sauce. And we'll cap it off with a special dessert.  Muy delicioso!

Get yourself into a pickle! Pickling is a magical preservation method and culinary art that not only extends a food's shelf life and makes vegetables taste delicious and healthy. Pickling is a global phenomenon which has hit new trends in todays foodie community. Every culture has had to find ways of preserving a harvest to be able to get nutrients during times when they were not available.In this class we will explore quick pickling, brining, and some hot water canning/processing. Garlicky dilled cucumbers, bright purple pickled beets and cauliflower, sweet and spicy dilly beans, and more. Learn just how easy it is to craft these delicious food items for entertaining and savoring. All ingredients supplied for this class. We'll taste some in class and you'll go home with some as well.

In this class we'll roll up our sleeves and learn a combination of traditional and new baking techniques for yeast leavened breads easily made at home--without a bread machine! Learn a versatile basic rich yeast dough which can be molded into various white loaves and rolls, panne bianca, or sweet breads like pecan sticikes. We'll also be makinga delicious wheat and flax loaf and an Italian focaccia. We'll taste the labors of our work and a bit to take home. Yum!

CHINESE DUMPLINGS
 

Dumplings are all the rage from dumpling houses to trendy restaurant chef inspired ones. Steamed or pan-fried--served with tasty dipping sauces or submerged in a light broth with vegetables. These little treasures can be filled with the traditional fillings or taken on a creative journey with unique additions such as stir-fried kimchee, curried meats, or even sweetened with fruit. Today's class will feature tender steamed shrimp har gow-- "crystal dumpling dough' that allows you to view the filling inside. Then using gyoza and wonton wrappers a traditional pan-fried pork and napa cabbage pot sticker. Kimchi dumplings in light chicken broth with scallions. And a tasty edamame dumpling. We'll make a few dipping sauces to pair with our finished dumplings. Several of the dumplings will have pork products in them.

Emilia-Romagno is knows for some of the best food in Italy. Proscuitto di Parma ham, Parmesano Reggiano cheese and Modena's famous balsamic vinegar.  We'll start with Romagna fagottini di proscuittto di parma--little Parmesan filled prosciutto pouches. Salad of arugula, pears and walnut with a balsamic vinegar.Meatballs filled with pine nuts, and golden raisins, and scented with a touch of orange zest. A pile papardelle with pancetta, lemon, and dark greens.  And for dessert the deep dark chocolate ferra torta terinina will be served.

ARTISAN PIZZA & FLATBREADS
 

The secret to artisan pizzas, flatbreads, and calzones is in the crust. Rustic hand formed dough with a minimal amount of toppings make for bubbly, crisp and tasty pies and flabreads. Get the ins and out on raising the yeast, fermenting the dough, and essential heat to get that great inner chew and a crisp crust. We’ll be making our semolina dough from scratch, raise it, hand form it and learn to use a peel to place onto a hot pizza stone. For a twist of we'll gridle some flatbreads and top them with roasted veggies, and flecks of cheese. We'll have a load of toppings that will include enough to make a variety of flavors such as a simple Margarita pizza, Greek olive and feta, veggie, prosciutto, pesto, artisan pepperoni, roasted peppers, zucchini, and much more. The sky is the limit!
