Most people visit--and think of--Sicily only during the two seasons the ancients claimed Persephone returned from the underworld to spend time with her mother, Demeter. Having been kidnapped by Hades, the god of the underworld, according to Greek mythology, the beautiful Persephone was finally allowed to return for half the year to her former abode to spend the lovely, temperate springs and long, hot summers. But what of the winters? This class will provide the answers. The menu mirrors the season and features comfort foods devise by the island's locals to comfort and soothe away the cold weather. Our chefs will guide you in the preparation of the following dishes:

Representing 55% of the population of the Region of Latium (or Lazio), Rome is a modern city whose people (some three-million strong) go about their daily business amid the ruins of the ancient capital of the Roman Empire. Tourists consider the cuisine to be Continental and those who don’t venture from the city itself would be somewhat accurate in this assessment. For the adventurous, the hills of Lazio reveal a long pastoral past that has shaped the peasant cuisine of its people. If you have ever been to a sushi bar and wondered what it would take to prepare your own rolls at home, at Chef Central we’ll show you how. Our two hands-on classes will take you through the step-by-step procedure for preparing restaurant quality sushi. In this class, students cut their own fish and prepare three of the most popular and artistic styles of sushi. Nigiri Sushi, or “supported sushi” is the most popular style of sushi in Japan. Students will learn how to cut and cook the barbecued eel for Unagi as well as learning the technique for hand pressing the supports and cutting the nori belt. Spicy tuna roll is a favorite among American devotees and is an example of Temaki, or “hand-rolled” sushi. We’ll show you how to cut the tuna, prepare the sauce and hand-roll the nori. “Battleship sushi” is for items that are too fluid to mount on a support. For this technique, we’ll fill the battleship with Tobiko or flying fish roe. At the end of the class, students will use the knowledge from both classes and the materials on their cutting boards to prepare their own creations.

One of the most significant traditions on the Italian calendar of culinary events is the Feast of the Seven Fishes, which takes place each year on Christmas Eve. However, Italians enjoy eating fish all year long, particularly in the regions loacated along the coastline from the West to the South and all the way around to the East. From Liguria to Sardinia, from Campania to Sicily and up to the Veneto all of these regions have a close relationship with the Mediterranean Sea and its historically abundant bounty. In this class, we will feature three of the most delicious seafood recipes of the Italian culinary repertoire and top it off with a classic, but easy, and quintessentially Italian dessert. You will work with your chefs in preparing the following menu:

  • Spiedini di with Limoncello (Grilled Shrimp marinated in Limoncello and Olive oil)
  • Cioppino (A Ligurian Fish Stew)
  • Tuna Genovese (Genoa-style Tuna with Porcini Mushrooms)
