Have you been decorating cakes but wonder how to decorate like a professional? At Chef Central we offer a series of cake-decorating classes that are designed to give participants a hands-on experience and provide them with the tools and knowledge needed to decorate cakes at home. This month’s theme will be Easter. You can learn how to work with the cake decorators tools and techniques to create a beautiful work of art. All materials and ingredients for the class will be provided and students will bring home a lovely decorated cake at the conclusion of the class. No previous experience is necessary; just the will and thrill to learn. This class will be conducted by guest Pastry Chef and Culinary Institute of America graduate Cristal Paredes of It's Delicious Designer Desserts of Englewood, NJ.

About the Chef: After six years of schooling, five years of Pastry experience and hundreds of cakes, Pastry Chef Cristal Paredes, decided it was time to create desserts her way. Cristal, a graduate of the Culinary Institute of America, fell in love with baking as a young teen. At just 24 years of age, she has worked at some of New York’s most prestigious restaurants and created decadent desserts for events at some of New York's iconic locations such as The Plaza and Ritz Carlton Hotels. Word of Cristal’s talent is quickly spreading, and keeps busy creating cakes, cupcakes and confections not only for family and friends, but for many private clients. While still working at New York’s Mondrian Hotel, she maintains a full baking schedule at home in New Jersey, some nights making dozens of desserts before heading right back to her full time job in New York.

Adult Hands-On Workshop: Bone, Roll, and Tie a Leg of Lamb, $95
 

Hands-on Class for Adults age 18+

One of the traditional Easter dishes is leg of lamb. Many Americans, however, don’t particularly like the taste of lamb. This is largely due to earlier experiences with mutton (not really lamb, but a mature adult), untrimmed lamb, bone-in leg or inferior cuts that were not prepared properly. Much of the flavor of meat comes from the fat and bones. With meats like chicken or beef, the bones and fat add a favorable taste to dishes and stocks. With many cuts of lamb, including the leg, the fat and bones impart a “gamy” or undesirable flavor. This is why the best way to prepare leg of lamb for a crowd is to bone, roll and tie the leg before cooking. It’s also much easier to deal with a boned leg of lamb in terms of slicing after it’s cooked. Boned legs of lamb that are purchased at the supermarket are often not trimmed enough and frequently contain undesirable fat and connective tissue inside the roll. Boning, rolling and tying your own leg of lamb eliminates all of these problems and produces a leg of lamb that is most suited to your particular use. In this hands-on class, each student will be given his or her own leg of lamb and our Chef will demonstrate how to bone, roll and tie the leg (seasoning optional). Students will then go home with their leg of lamb for the following day’s Easter meal, as well as the knowledge of how to bone, roll and tie future legs.

If you have ever been to a sushi bar and wondered what it would take to prepare your own rolls at home, at Chef Central we’ll show you how. Our two hands-on classes will take you through the step-by-step procedure for preparing restaurant quality sushi. In this class, students cut their own fish and prepare three of the most popular and artistic styles of sushi. Nigiri Sushi, or “supported sushi” is the most popular style of sushi in Japan. Students will learn how to cut and cook the barbecued eel for Unagi as well as learning the technique for hand pressing the supports and cutting the nori belt. Spicy tuna roll is a favorite among American devotees and is an example of Temaki, or “hand-rolled” sushi. We’ll show you how to cut the tuna, prepare the sauce and hand-roll the nori. “Battleship sushi” is for items that are too fluid to mount on a support. For this technique, we’ll fill the battleship with Tobiko or flying fish roe. At the end of the class, students will use the knowledge from both classes and the materials on their cutting boards to prepare their own creations.

The culinary history of modern Thai cuisine began with the rice and fish dishes of the kingdom of Sukhothai. Besides fish and rice, wild mushrooms, fruits and vegetables were mainstays. In 1511, the Portuguese introduced chilies. By the Rattanakosin period of early Bangkok, chilies were in wide spread use and the cuisine that we now recognize as Thai was firmly established. During this period, two distinct cuisines emerged- the individual cuisine in Thai households and the "Palace Cooking" of the royalty and privileged class. A Demo/Class for Adults 18+

Emilia-Romagna has been dubbed "Italy's food basket". With annual productions of 2.5 billion pounds of wheat, 220 million pounds of durum wheat, and 1.5 billion pounds of corn, it has earned the title. Aside from the prolific production of staples, Emilia-Romagna is home to some of Italy's most treasured culinary traditions. There is Parma; where Parma ham and Parmagiano-Reggiano cheese are produced; Modena, the balsamic vinegar capital of the world; and the capital city of Bologna, where many Italians (especially the Bolognese) feel that Italy's best food is produced. Come with us as our 20-part culinary tour of Italy continues with this month’s demo/ class on the Region of Emilia-Romagna. Our chef will lead the students as they prepare a typical menu of the region. At the conclusion of class, participants will enjoy the fruits of their labor and receive a printed version of all recipes and technique so they might reproduce the meal at home for their family and friends.

Teens Summer Cooking Camp: Classic Cooking Techniques, $475
 

A hands-on series of week-long cooking classes for teens ages 11-17 to be held in our Paramus, NJ, location. In both culinary and baking camps, the curriculum is designed to follow the progression of topics similar to what would be offered at an adult cooking school. All camps cover the topics of sanitation and food safety. In addition, knife skills will be covered in all culinary camps.

Week 1: Classic Cooking Techniques and Sauces

This Camp teaches students the six techniques of classic cooking and the six Mother Sauces of French cuisine. Other topics covered include an introduction to Italian cooking, brunch menus and barbecue. The field trip will be to a classic French restaurant where lunch will be served. The graduation ceremony will include a dessert buffet and plating competition by the students, served to family and friends.

  • Week I of camp will take place Monday, June 23 through Friday, June 27
  • 9am-1pm each day
  • Cost: $475 per week
  • Lunch will be provided each day

NOTE: Camp will take place in our Paramus, NJ, location.  Transportation will be provided for Westchester registrants at a cost of $60 per week. Pick-up and drop off point will be our White Plains store location. First-time campers must purchase a tool box for $75. Baking tool boxes may be used in both Baking Camps; Culinary tool boxes may be used in all culinary camps.
