How could we improve your experience?
I like to be prepared for the class before I arrive. As such, I like to review the recipes beforehand so I will be able to ask any questions right away rather than waste class time. Would suggest that you email the recipes for a class to the attendees beforehand although you will probably still have to have recipes to hand out to attendees when they arrive.
Please help us out by telling us what Cooking Classes you would like us to offer in the future.
Plating and presentation: (garde manger) I can cook reasonably well. But I would really like to take my food to the next level by being able to plate the food so that it looks as good as it tastes. Sauces: I struggle with sauces, in particular BĂ©arnaise and Hollandaise. I usually turn them into scrambled eggs or they are too runny. Crepes. I was scheduled to attend a class with Diane on crepes, but she canxed due wx. I make them, but usually the first one or two break up and end up in the garbage. Mexican, specifically chile rellenos and refried beans.
Additional comments and observations
I enjoyed the class and talking with Chefs Thomas and Sean. Maybe during the course of the class as Thomas and Sean went around to each group, it would be really interesting and add to the value of the class to show little tricks, techniques, etc of how the "pros" do something to take the food either in taste or presentation to another level.

How could we improve your experience?
I think a written lesson plan at the top of the handout would help students know what to expect from the class, and would help keep everything on schedule. It'd be great to know at the start we were going to see the dough get made, pair off to make the sauces, and that everyone would have ample hands-on time rolling and making the pasta.

Everything you have planned sounds neat, we will be keeping an eye on the schedule.
