I really enjoyed the class that Jose Luis gave last night. His presentation style is fantastic. He is completely straight-forward and clear in explaining his recipes. I also loved all his cultural references to the food. For the most part the food was spectacular. He over-cooked the scallops which he admitted to. Hey, I've been there and done that.
My suggestions would be to streamline the class a little more so it would take less time. Thank you, Barbara, for starting the class at 5:00. We did not leave until 9:15. My other suggestion would be to make the recipes a little more user-friendly. Often he was explaining things that I thought were not in the recipes, started to take notes and then discovered they were buried in a long paragraph.
It still was a great class and I am very happy I attended. He is so passionate about his food and does a wonderful job explaining it.

I couldn't see what the instructor did in the pots over the stove - maybe adding a mirror there?
