The instructor was: And more than entertaining, he obviously did a lot of hard work on his own to perfect these techniques. He presented everything in a very clear, concise, understandable way. I would enthusiastically take one of his classes again.
The atmosphere was: There was an "in" group that added lots of fun to the evening.
Complexity of the recipes: I am saying complex because of some the equipment needed. If you had this equipment, it would not be hard at all.
The food was: I'm still not sold on the foam stuff and I thought the trout dish needed a contrasting crispy texture. I loved the duck dish.
The skills you learned were: I'm saying very useful because I had not seen them before at IGT. I'm not sure I will ever use them or buy the equipment but it was very, very interesting and I loved the way the chef explained everything. He is an excellent teacher.
I enjoyed myself and had fun: I had lots of fun and as I said before I will be looking out for his name on your schedule. I was very impressed.
