Complexity of the recipes: The recipes weren't complicated but the possibility for failure, especially for the dessert, was considerable. It added a bit of drama to the evening.

The food was: The food was actually almost mind-altering.

I enjoyed myself and had fun: Great class. Consider asking the chefs to go around the room and ask participants to introduce themselves in three sentences: name, where they are from, and what they hope to learn at class. Courses should be more welcoming to the audiences to make the atmosphere warmer.
