Additional comments and observations
Sometimes it is difficult to see the chef's work. Mirrors are small and tools placed between work stations and students. Otherwise, loved it. Donna & Jerry Schwanke

Additional comments and observations
Chef Tony is real find. I enjoyed this class so much. He has an incredible degree of cooking knowledge and has a wonderful presentation style. He is on a par with Adam in my book. Even though I ate too much, which is entirely my fault, I really learned a lot. I will probably never cook the game he used last night, but I found all his recipes very adaptable to other meats. It was great.

Additional comments and observations
one always feel very welcomed and pampered, and cheerfully brought me water with no ice. If I could afford it, I'd be there for all of them!!!
Tony was a super chef instructor, bring him back! Wine pairings were wonderful with the food. If I have to criticize anything, it would be: the mirrors don't help, as they are not placed to be able to see anything, and the chairs aren't that comfortable (for me anyway) to sit for 3 hours so I always need to get up and stretch and helps to stand to be able to see what the chef is doing sometimes.

Additional comments and observations
Something that might add to the conversation through the class is to not seat people right away. Rather, let them mingle until the class actually starts (you could even say, "You'll be sitting here" so that people know where they'll be. I was at the end and really only had opportunity to talk with the person next to me and the one on the other side of her.
But aside from that, the class was really enjoyable and Tony was a confident and accomplished instructor. It wasn't that the techniques were so complex--it was that the level of sophistication of his menu elevated the techniques. I'm looking forward to the Crab class on Dec 10.
