Please keep offering the technique classes, like the kind you learn in culinary school. Would love to have a class for Gravlax and Lox, another one for Sushi, incursioning in the alternative (healthy) options would be super cool (like making 'raw' desserts) :-)

I would recommend this class to everyone, and I will! I walked out of the Knife skills class feeling like I learned so much, and it was all so important. I am so grateful I went to the class.

Wes was an extremely good chef instructor. He was helpful, engaging, very knowledgable, and personable. My husband is really not interesting in cooking, but he is willing to be "sous chef" so I got him to this class to learn how to be more efficient. The upside is that he had a lot of fun, and we both learned some very helpful skills. There are things that I have been doing for MANY years that I now know how to to better! Thanks. We didn't do recipes so those questions are moot.

Maybe. It's sort of basic skills and I realized a lot of what is needed with knife skills is practice, practice, practice. Not all that much to learn (at least in this entry level style).

Definitely!! Wes was not only an informative instructor; but he related well to the different skill levels in the class. I especially appreciated his humor and his "geekness" in regards to stressing knife skills and techniques rather than to get "cutsey"..... we learned realistic techniques that won't shorten my prep time anytime soon, but I will enjoy the prep so much more now!

This class was part of the birthday gift my husband and I gave our daughter, Kelly. It was a Mom-Daughter fun time together and now Kelly can use her GC to purchase whatever knives she wants---probably one great Chef knife now!

Instructor could speak a bit louder -- background kitchen noise made it hard to hear sometimes. I would've like to hear some talk or receive some writeup about what one should use different style knives for.
