The skills you learned were: Even though poaching an egg is a simple thing, it's always good to get new tips and actually do it again since it is something I hardly ever do. I also enjoyed his views on how to do mushrooms, gastriques, and preparing a duck confit.

I enjoyed myself and had fun: Actually, with a small group this hands-on class was very enjoyable. I'm glad that everyone had a chance to participate in every dish. Pascal had it very-well thought out and organized.

The instructor was: VERY funny and personable, and knowledgeble. Easy to pick his mind.

The atmosphere was: and relaxing and all of this enhances learning and creativity

Complexity of the recipes: recipes were also useable to the hoome cook, for both family and entertaining dinners
