The instructor was: My husband can't say enough nice things about Michelle! Her style, her knowledge (.... her ability to answer everyone's questions at once....) -- She was just the quintessential teacher -- perfect in this role.
The atmosphere was: IGT is always so elegant -- I love being there. The class area is just SO "classy".
Complexity of the recipes: We were surprised that we really made 3 cheese that -- actually -- tasted like familiar cheeses (but, of course, are better because WE made them).
The food was: I thought the cold soup & salad at the beginning were a nice touch - refreshing on a hot day. But I was disappointed that we didn't have an "antipasto" (which was advertised) at the end. All that cheese needed a little prosciutto, sausage, olives, hot peppers, etc, as a counterpoint. (However, the chocolate & strawberries with the mascarpone were absolute perfection.)
The skills you learned were: I feel like I walked through a magic door and --poof! -- NOW I know how cheese is made.
