The instructor was: I was not expecting entertainment. I wanted expertise. There was very evident professional expertise. It was less evident that there was a practical home application for that expertise.
The atmosphere was: Excellent venue and resources. Well orchestrated.
Complexity of the recipes: Good focus on sauces, spices, and preparation. Very poor on a variety of good veggies to compliment main meat ingredient. These recipes would be good center-pieces on a restaurant menu but were lacking for practical home application.
The food was: Too much meat. Too few veggies. what about some tutorial on all the asian veggies that should be considered in stir frys?
The skills you learned were: What about learning how to layer in and time the proper veggies depending on cooking times? A key skill totally overlooked.
I enjoyed myself and had fun: It was pleasant but not nearly as instructive as I had hoped it would be. Learning how to wilt spinach is not a great skill.
