The skills you learned were: i've since had people question some of the things i just learned - i so appreciated the class and instructor and would take more - but, the specifics of canning that i learned have been questioned by friends w/experience. i feel confident in what i learned, but now i have more questions - this could be a cool two-series class next fall!

The instructor was: I think that Amy is very knowledgeable about the subject. However, it seemed that she wanted to do too much. It seems that a demo format rather than hands-on would suit her better. The atmosphere was: There was some confusion about the recipes. After stressing repeatedly to read the recipes, we started on our tasks and then were told to do them differently by the assistant and then taken to task by Amy for not reading the recipe! She seemed almost angry, but I think there were too many things going on (see suggestion above about demo vs hands-on).
