Yes, it was a good topic, focusing on fish that isn't as commonplace as some others. Very flavorful and easy to prepare. The only comment I would have for the instructor is to remember that we aren't culinary students, so perhaps a little less technical jargon (e.g., instead of "protein" or "product," just call it "fish"). And although we had many options for mixing and matching items in class, it would have been nice to have had a clear example of each as they were written. For example, the tapenade was just in a bowl on the prep table and not used in any of the dishes served.

Although I haven't had time to make the fish recipes at home yet, I did roast veggies the day after class according to the method we learned and they were the best ever! Beets, carrots and celery root all came out delicious. Thanks for a good class.
