Additional comments and observations The instructor was: smart, great review of history and routes of food 'transmission' across continents; very lively and engaging Complexity of the recipes: average to complex, but I am a barely mid-level chef The food was: loved the shrimp, the enchiladas, the flan, the dessert The skills you learned were: blanching tomatoes, cutting peppers and such for even sizing, braising, rub and browning duck
