Complexity of the recipes: There was nothing too complex but I still appreciated having the recipes very much

The food was: Everything was spot-on

The skills you learned were: I especially appreciated the technique of cooking the duck thigh and leg on the carcass.

Complexity of the recipes: The duck would be difficult. Cory made it look reasonably easy, but he is a skilled chef. However, we loved the duck so we may try it.

The instructor was: Cory engages the audience well with teaching and conversation. Always a pleasure.

Complexity of the recipes: Restaurant quality for the home cook, very useable.

The skills you learned were: I always thought breaking down a duck would be the same as a chicken. WRONG! Also, the technique used for roasting, using the carcass as a rack is brilliant.
