Jeremy was great. I really enjoyed the access to the commercial kitchen and talking to Adam during the slower sections of the class.

I was hoping to learn some more advanced techniques, however, the skills related to breaking down, brining and smoking meat will certain improve my activities in that area.

Additional comments and observations
The class was action packed and we ran a bit short on time. The course objective may have been too ambitious, however Jeremy did a wonderful job "herding cats". Thanks also to Adam for sharing his approach to quick cured pork belly. I'll definitely be trying that recipe in addition to those provided by Jeremy.
