Pristine Greens – Take your salad skills to another level.

Chef Sean will introduce 4 unique salads, one for each season with a strong focus on seasoning, flavor development, and procurement. Salads are far too often an aftert hought, we are here to bring them to the forefront. Outside of their utility as a side dish, a great salad can be the focal point of a light dinner or feature as a satisfying lunch. This class will expand the way you think about building a salad and how you think about balance in a dish. A good salad needs a crunch, we will discuss different ideas for bringing more delicious crunch into your life. You will never need to buy another store-bought dressing; after this class, you will access the skill to make fantastic vinaigrettes and rich emulsions. Join us for an evening of good eating and entertaining conversation!

After a 25-year career as a cook and chef, Sean started “Pristine Eats” in 2024 to practice cooking while leading a startup in the restaurant technology space. “Pristine Eats” is an organization dedicated to helping home cooks grow and develop the skills to cook confidently. Sean’s career has spanned two decades and includes a list of restaurants with Michelin stars and James Beard nominations. Sean’s cooking style is based on French technique with strong global influences. Most recently, he led the kitchen team as Executive Chef at Steenbock’s on Orchard in the Discovery Building on the University of Wisconsin campus in Madison. Teaching the craft of cooking is where he is most comfortable in the kitchen, helping cooks understand that cooking is not a rigid practice but requires improvisation and creative thinking.

Welcome to the Jungle
 

The Tharu people, whose homelands are the tropical valleys of southern Nepal, are one of Nepal’s major ethnic groups. They are famous for their warm hearts, delicious food, and the fact that they live among some of the last wild populations of tigers, rhinoceroses, and elephants in the world. Your instructor, Gabriel Heck, went to Nepal to learn traditional Tharu cooking in jungle villages. In this class he will share his knowledge with you. You will learn how to make:

·  Stir-Fried Pork (Tareko Bangurko Māsu)

·  Tharu Steamed Dumplings (Dhikri)

·  Braised Greens (Sāg)

·  Green Mung Bean Dāl (Hariyo Mungko Dāl)

Knife Skills: Learn to Cut Like a Pro
 

A well-honed knife and well-honed knife skills are the two most important tools to make your meal prep time a joy, not a chore. Join Orange Tree's knife sharpener and cutlery nerd Keith to get the most out of your blades. 

After an introduction to the proper grip and cutting techniques, you will get to practice on a variety of produce. Learn how to slice, dice, mince, and julienne your way to kitchen success.

Students will receive a voucher for a free knife sharpening on one knife, as well as a 15% discount on all cutlery on the night of class. 

Light Snacks will be provided. Expect to be standing for most of the duration of the class.
