EATING VIETNAM--The Newest Foodie Paradise
 

Vietnam is one of the hottest travel and food destinations. A cultural mix of history the cuisine is influenced by invaders and neighbors. Chinese brought stir-fires, and chopsticks. Mongolian invaders brought beef and French colonization brought bread, coffee and pastries and goes way beyond Pho and Bahn Mi.

Tonight, will dig our chopsticks into Loc Loc beef aka ‘shaking beef’—a savory stir fry served with glass noodles. Bánh xèo a sizzling crepe stuffed with shrimp, bean sprouts and served with customary fresh mint, cilantro and basil leaves. Pork belly skewers with cucumbers and a caramelized sauce. A crisp green papaya salad with lime citrus dressing.

Adult Class: You may bring some wine/beer to enjoy with your meal. Class runs about 2 1/2 hours.

Laissez les bons temps rouler with a taste of New Orleans. Tonight we'll take the Mardi Gras festivities up a notch and celebrate good ol' gulf coast food with a Pickled shrimp cocktail with a traditional remoulade sauce. Slow simmered Creole chicken and sausage jambalaya. Lightly creamed greens. Zippy fried corn with crispy bacon. And what else but banana's Foster for dessert!

Do you feel a tug on your line to eat more fish? Fish makes a perfect quick healthy meal in minutes without too much fuss. Don't be afraid to cook fish! Learn what to look for when purchasing and how to cook to perfection. We'll make a variety of 4-5 fish dishes-- baked, sauteed, grilled, pan fried and/or poached to add to your repertoire. Some will have sauces, others may have a rub, Use of citrus, herbs and spices to make yumulicious and fabulous fish.  Fish and recipes will be determined by market availablity.

LEAN & GREEN--Cutting Down The Carbs Day 2
 

Are you bored with the same old boneless, flavorless chicken breast and a salad? Baked fish with lemon pepper and microwaved broccoli just not cutting it? We’re all trying to cut way back on carbs but that doesn’t mean we have to cut out flavor. Get out of the rut and join us for two nights of fresh flavors, a variety of lean proteins and veggies that will keep you on track. You may be on one of the "lean and green" eating programs out there and this class will give you the tools and flavors to stay focused.  Each week will concentrate on a variety of inspirational and delicious recipes.

ROMANTIC ROME--Cucina Cucina
 

Cucina Romanesca is as colorful as it’s past. Gutsy pastas, gnocchi, and simple contorni--vegetables cooked with garlic abound in this "Eternal City". Tonight we'll celebrate this cuisine with tacchino saltimbocca alla Romana—turkey cutlets speared with prosciutto and fresh sage leaves sauteed in a white wine and shallot reduction sauce. The infamous cacio e pepe with freshly grated pecorino Romano--we will be making the pasta from scratch. Slurp up garlicky sautéed cicoria greens or broccolini with golden raisins and pine nuts. Roman salad with giant crostinis. A luscious dessert will be served. Hail Caesar!

RAVIOLI & TORTELINI WORKSHOP
 

Time for raviolis and tortellini. In this workshop, we'll make a rich egg pasta dough and roll out into long sheets to be filled with luscious cheeses, poultry fillings and vegetables then cut and mold them into all kinds of shapes and sizes. It's easier than you think and after a few turns you can become a ravioli making machine. You'll mix, crank it out, fill, fold and seal. We'll make a few sauces to go along with them and sit down to a wonderful plate of handmade pasta pillows. Freezing will be discussed because who wouldn't love a freezer full of homemade ravioli ready to cook at a moments notice for family dinners or entertaining? Today we'll make a chicken and leek ravioli with a light spinach sauce and a Pumpkin tortellini with browned butter sage sauce.YUM!

Dim sum is a fun way to eat but sometimes the wait time at a dim sum house can be agonizingly long. Tonight we'll make a festive menu using traditional Chinese ingredients. Ground pork and ginger potstickers with soy lime dipping sauce. Puffy baked bao buns filled with a light ground meat and lap xuong sausage. Fresh flat rice noodle with hoisin soy sauce and stir fried gai lan--Chinese broccoli. Shrimp toast.
