This 10-week online series is designed for the beginner or intermediate culinary student or baking enthusiast looking to improve on the basics of baking and pastry. These four-hour classes are taught via Zoom where you will be working in your own kitchen under the guidance of our head Pastry Chef Clemence Gossett. 


Our classes are crafted to teach the basic chemistry of baking as well as techniques you’ll use both at home and in a professional kitchen. As with all our classes, everything you learn will be made from scratch, from the graham crust on your cheesecakes to the candied lemon zest on your lemon bars. We encourage you to bring a food-safe container to class to bring home your delicious work. Certificates of completion will be awarded at the end of the series.

Transparent Trade Cacao, Quality Control, and the Flavor Profiles

With special guest Anjuli Dharna of Uncommon Cacao

 

Anjuli Dharna is Uncommon’s favorite “bean gal.” Tonight, she guides us through a tasting of some of the best craft chocolate bars from regions of Guatemala and Colombia. A deep dive into origins and supply chains, Anjuli’s talk explores how beans are cultivated in small batches to achieve their target profiles, whether it’s lemon curd, strawberry and mocha in Guatemala’s Lachuá region or rich chocolate, caramel, and floral notes in Tumaco, Colombia. Each is an expression of the unique sourcing, craft and quality control of the places where these beans are harvested and cultivated. 

 

Anjuli’s bio

Anjuli Dharna is Sales Director at Uncommon Cacao, connecting craft chocolate makers with transparently traded cacao. She loves discovering and tasting the flavor potential specialty cacaos contain. You can often find her in the bean room concocting blends and chocolate experiments to uncover new pairings and flavor profiles. She spent four years in the coffee industry developing her palate after writing an economics thesis comparing fair trade and direct trade sourcing practices in specialty coffee and cacao. Anjuli is dedicated to equitable, inclusive, and transparent business practices, delivering excellent quality cacao, and customer service that builds lasting relationships with chocolate makers at Uncommon Cacao.

 

Class price includes your chocolate tasting kit. Curbside pick-up for your tasting kit will be available starting September 14th at The Gourmandise School.
