Every Thursday is Knife Sharpening Day at The Gourmandise School.  It's so important to keep your knives sharp!  Keeping your knives sharp makes a huge difference in your prep process.  It also is a good way to prevent accidental cuts.  To really know how to handle and care for your knives, sign up for our Knife Skills Technique Class.

SANTA MONICA CHOCOLATE SOCIETY: An Evening with Conexión Chocolate and founder Jenny Samaniego
 

A journey through Ecuador to discover the unique chocolate profiles.

Conexión chocolate creates chocolate with exclusively with “fine or flavour” Arriba Naciónal cacao beans from Ecuador. Fine or flavour cocoa accounts for only 5% of the world’s production of chocolate. Arriba is prized worldwide for its complexity, intensity, and balance. Despite the chocolate industry attempt to cut corner to increase yields in cacao production using GMO cacao Conexión is steadfast in their opposition to this movement using only heirloom Arriba cacao and we work directly with Ecuador’s farmers to help restore and preserve this national treasure.

Jenny Samaniego founded Conexión Chocolate after nearly 10 years in the industry believing it was possible to produce an exquisite, high-end chocolate in the country of origin. In 2013, Jenny started making Ecuadorian Couverture under the company name Chukulat. Three years later, Jenny returned home to expand her offerings and take an even larger hands-on role in production at origin. That is when she decided to re-brand as “Conexión” – to help make the connection between local cacao farmers and consumers of fine Ecuadorian chocolate throughout the world. Through this connection, they empower small family farms. By keeping their chocolate production in the country of origin, they add value to the local economy. Since it launching in 2017, Conexion Chocolate has won over 30 chocolate awards from the Academy of Chocolate in Ecuador, London and the international Awards.   

We are excited to meet Jenny, hear about her amazing journey and taste several Conexión chocolates – from her favorite couvertures that master chocolatiers are using all over the world to unique inclusion bars she hand-picked especially for our group to taste!
