KNIFE SHARPENING DAY
 

Every Thursday is Knife Sharpening Day at The Gourmandise School.  It's so important to keep your knives sharp!  Keeping your knives sharp makes a huge difference in your prep process.  It also is a good way to prevent accidental cuts.  To really know how to handle and care for your knives, sign up for our Knife Skills Technique Class. 

You can drop off your knives by 5pm Wednesdays, and pick them up anytime after 2pm Thursdays

Join us for a very exciting Chocolate Society featuring Warren Hsu of Fu Wan Chocolate! Hsu will Zoom in from Taiwan and give us a tour of his tree-to-bar cacao farm and facility. This will be an epic event and will end in a tasting of Fu Wan’s very special and very unusual chocolate. This will also be the last Santa Monica Chocolate Society before we take a Summer break.

 

Warren Hsu, who founded Fu Wan Chocolate, was the first chocolate taster in Taiwan to be certified by International Chocolate Tasting Institute.  Led by his passion and outstanding skills, he created Fu Wan, the first Bean-To-Bar chocolate maker in Taiwan in 2015.

 

Sourcing high quality Taiwan cacao locally and premium cacao beans from around the world, Fu Wan specializes in bean-to-bar and tree-to-bar chocolates. They fuse chocolate and Taiwan's signature ingredients to create fresh, delicate and charming new flavors. Every Thursday is Knife Sharpening Day at The Gourmandise School.  It's so important to keep your knives sharp!  Keeping your knives sharp makes a huge difference in your prep process.  It also is a good way to prevent accidental cuts.  To really know how to handle and care for your knives, sign up for our Knife Skills Technique Class. 

You can drop off your knives by 5pm Wednesdays, and pick them up anytime after 2pm Thursdays

DAY 2 – SOUFFLES

Chocolate Soufflé,

 

DAY 3 – COOKIES & BROWNIES

Our Famous Chocolate Chip Cookies, Brown Sugar Brownies

 

DAY 4 – GALETTES

Rough Puff Pastry, Seasonal Fruit Filling

 

DAY 5 – ECLAIRS

Pate A Choux (Cream Puff Dough), Pastry Cream, Chocolate Glaze

 

 
THIS IS A 2.5 HOUR CLASS, FROM 10:30am - 1:00pm
AGES 12-16 years old

All students be required to wear masks through the duration of class except when actively eating or drinking. Students will be asked to wash their hands at the beginning and throughout class. There will also be sanitation stations located in the classroom and students will be encouraged to use these as often as necessary.  If in person classes are cancelled due to government regulations relating to COVID-19, you will receive a credit in your account for the amount you paid that will be valid for any in person or virtual class. Class size is limited to 8 students.

DAY 1 - KNIFE SKILLS

DAY 2 – GRAINS

Lemon Herb Risotto, Mediterranean Grain Bowl with Sumac & Lemon

 

DAY 3 – POULTRY

How to Break Down a Whole Chicken, Moroccan Braised Chicken, Orange Scented Couscous

 

DAY 4 – FISH

Homemade Tortillas, Fish Tacos, Pico De Gallo, Cilantro Sauce

 

DAY 5 – BEEF

Homemade Burger Buns, Burger Patties, Oven Fries

AGES 12-16 years old
