| BASIC SKILLS SERIES | | |  | | THE SERIES INCLUDES THE FIVE DATES MONDAY SEP 13, 20, 27, OCT 4 & 18, 2010 @ 7.30 PM
Mondays at 7:30 PM This five part series is designed for beginners and for anyone who never took cooking classes and who wishes to improve their cooking knowledge. This series guides students carefully through principles that teach basic cooking methods that can be applied for a lifetime. The series concludes with a graduation, and a certificate of completion. The fee is $325.00 for the entire series. (INCLUDES ALL FIVE CLASSES) BASIC SKILLS I: Monday SEP 13, 2010 @ 7:30PM. “INTRODUCTION TO THE WONDERFUL WORLD OF COOKING”: We will talk about the right type of knives to buy and how to use and keep them sharp. Discussion will also include how to prepare stocks and basic sauces, and many more basics that you should know. Remember cooking is a hobby and like tennis, golf or piano, you must first learn the fundamentals before you can enjoy it! BASIC SKILLS II: MONDAY SEP 20, 2010 @ 7:30PM "SALADS AND VEGETABLES": How to prepare a great dressing, how to make a mayonnaise and create an emulsion. How to make the best Caesar salad dressing, with home made croutons. How to steam, poach and pan fry most vegetables. BASIC SKILLS III: Monday SEP 27, 2010 @ 7:30PM "SAUCES AND MORE SAUCES": This class will concentrate solely on sauces from the five basic "mother" sauces to the more complex sauces, beurre blanc and the most delicate contemporary sauces and coulis. We will also cover meat reductions and their various sauces. And since we are so close to Thanksgiving we’ll prepare the perfect Gravy. BASIC SKILLS IV: Monday OCT 4, 2010 @ 7:30PM "BASICS PASTRY AND DESSERT": Learn how to make those wonderful dessert sauces, like cream anglaise and fruit coulis. Learn how to make a chocolate roulade and a smooth and delicious butter cream and chocolate ganache. BASIC SKILLS V: Monday OCT 18, 2010 @ 7:30PM "HOW TO PREPARE THE PERFECT MEAL": We will combine the knowledge acquired in the first four classes to prepare the perfect dinner. THE IS THE PERFECT SERIES FOR ALL OUR GRADUATES FROM COOKING 101. Or for anyone that has some basic kitchen skills and would like to expand their culinary knowledge. This series will give you just the techniques you need to motivate you to get back in the kitchen, and inspire you with new and exciting ingredients. We will pick up where we left off and explore the wonderful word of risotto, polenta, and phyllo pastry. We’ll also prepare fish and seafood from the simple pan sauté to the more complex oven roasted papillotte. We will also prepare stews, roasts as well as new and exciting poultry.
