I would not change a thing about this experience! It was so much fun and it taught me that I really can cook! And, of course, the food was unbelievably delicious!!

I originally signed up for this class with my husband because it sounded like it could be fun, but I doubted that I would be able to improve upon my kitchen skills as I've always been a terrible cook. I was so thrilled to find that not only was the class a lot of fun, but that I could take what I learned and go home and actually do it! I really could not believe that I could make such delicious food (neither could my mother when I told her)! Chef Jean Pierre is really wonderful and truly inspires you to go home and do what you learned. Leanne and Bradley were also great! I would recommend this experience to absolutely everyone, and can't wait to sign up for the next series! Thank you Chef - you did what nobody else has been able to do - make me WANT to cook because I know that I can make things that taste wonderful!!!

At first I was disappointed that we weren't doing hands on activities at the class but this quickly passed. I learned so much from the class that I never would have learned in a more hands on environment. Chef Jean Pierre is great. I am definitely coming back for 201. I LOVE the way Chef controls the class. People ask the stupidest or redundant questions. He answers them tactfully and with respect. "that is for a recipe class" or "we'll discuss that in another class" Bravo. I want to return for more classes.

Cooking 101 was delightful and entertaining. I was surprised that I learned things I'd not heard elsewhere. My only suggestion would be to introduce Leanne and Bradley at the beginning since they are an integral part of a magical cooking experience.

I really liked how Chef Jean Pierre allowed Bradley to give additional comments occasionally. Generally they were an added benefit to the group.

I learned so much with this course. Because I have learned the basic methods I am better able to adjust recipes, and understand what needs to be done. The only downside is that chef Jean Pierre's food as ruined going out to eat for us. We are lot more picky and found that dinning out has a different expectation now.

Last night Chef Pierre took a member from the audience and asked him to form salmon cakes. Watching a novice try to execute a process during the preparation/cooking stage while Chef Pierre was critiquing him, was very helpful.

I took the 101 class because (even after 20+ years in the restaurant business front of the house) I know how to cook, but I don't know why I know some of the things. Chef Jean Pierre explains methods and reasons in a fun atmosphere. I thoroughly enjoyed learning the "why" to the what I knew- I am anxiously looking forward to continuing my education with Chef Jean Pierre.

My cooking has always been "average" and I could get by with a small dinner party. Since my experience with taking the classes, my friends rave about my cooking... It's the simple things that I learned: when to add, how to prep and making things simple. This class has changed the way I cook, how I shop and certainly how great thing now taste instead of "average."

The only thing I would like Chef to provide is lower fat options or ingredient substitutions for some recipes. But I understand not all of them can be changed and still be delicious!

Just idea to toss around..class one, meeting our class mates. Perhaps asking everyone to be there at 7:15 for meet, greet, glass of vino in the lobby..before embarking into the class and the kitchen...other than that, not much more to add. It's a great series.

Great time- really enjoyed the entire experience. After class 3 I started dreading that it was going to end..and was sad driving to school on the last night. After 5 weeks, it feels like a family and a group that you've joined, rather than just a 5 week series. Maybe a smaller class, and a tad bit cooler. Maybe a job, part time of course. Other than that, nothing else.

Would you come back: The class was great! I am very excited to continue with the 5 week series. It would be even better if it was just a little bit shorter because I have to be to work in the morning at 7am. In the future, I may take more classes in the summer months when I am not working.

I thought the class was going to be more hands on. Wish we could take turns chopping and doing things. I understand the time crunch though because it is a lot of information. But, if you could make it a little more hands on.

I was hoping it would be more interactive with us also practicing the basic skills. I would also try to tone down the number of questions from folks even more. The chef tried to do this but certain folks insisted on asking too many questions (even interrupting him to do so), many of which had been answered or would be in future classes. They should focus on absorbing. I paid to hear the chef speak, not the students and the fact that this caused the chef to lose focus at times and prolong the course and extra half hour was frustrating to me. I think he should either suggest all questions be held until a certain point (e.g. end of a dish being done) or suggest that he will spend 5 minutes at the start of the next class addressing any questions that popped up from the prior class so people don't feel like they have to ask the question now.

The atmosphere was: It would be nice to take a moment at the start of class, have folks introduce themselves, their reason for taking the course, and their experience so the group who will spend 5 weeks together is comfortable with each other.

Complexity of the information provided: The chef did a good job not to delve too much into minutea of cooking, but give the basic concepts as applied -- although the questions from the group were far too particular and distracting (and at times confusing)

The Food (or Wine for a Wine) Class: I was not the biggest fan of the fish dish, but the pesto almond chicken was delicious.

The Skills that you learn were: Good introduction to knife skill and cooking concepts which is what I was hoping for.

I hope that the notes that we will receive will include notes like: How to tell if your sauce is to acidic and what to do about it if it is. How to steralize your chopping block, the canned tomatoes we use are this brand and they can be found at publix, make sure to get the peeled tomatoes. The recipe's can be followed yet the little tricks and tips would be nice to have in the written format so that they can be used quickly as a refresher if need be at a later date.

I can't think of anything. The class was great. The pace of the class was perfect, questions were answered, and Chef is very entertaining. I was a bit hesitant that the class would be "too basic" for those of us who already enjoy cooking. However, once Chef started explaining not only the basic techniques, but the "why" behind each technique, I learned so much. This class is excellent for beginner cooks as well as those of us who are self-taught and can definitely benefit from learning the fundamentals in order to continue creating great dishes. Chef is so knowledgeable that you can't help learning from him.

Would you come back: Awesome class. I have taken classes before, and ended up a little lost. This class taught me so much I didn't know - how to tell if you're using a good knife, the proper way to hold the knife and slice, what ingredients to add first, how to cook garlic, etc. Class was very entertaining, and I am looking forwad to trying out the recipes.

I got this as a Christmas gift, and I was extremely disappointing that we didn't get to do any cooking. The class was interesting enough, but I really wanted to get more hands on experience. I'm already a pretty big cook and I thought that it would be great for me to learn the basics, I just thought it would be more hands on and less like the food channel or some other tutorial I could get offline. It was great to finally get to try the amazing food I'm watching being made, but I really wanted ideas of how to kick my cooking up a couple of notches and to learn what tastes go well together rather than following a recipe.

The Skills that you learn were: I cannot believe how much I learned in this very first class! It seems I have been chopping and cooking onions incorrectly for decades. The best part was that Chef Jean-Pierre explains not only the "how" to do things but the "why" things is done the way he suggests. It was a revelation. Personally I need help on where to find the ingredients eg. the Pernod liqueur I was looking for it in the grocery store finally I found someone who told me that I should look for it in a Liquior Store.

Since I walked out of the class I haven't stop sharing with my closest friends and family all the great little things I've learned. When sharing my new found information (just to give credit where credit is due) I've relied the information in my best Chef JP voice. Can't believe after all these years everyone I know and I have been cutting improperly, adding ingredients in the wrong order, and using inferior tools in the kitchen to do so...can't wait for what I'll learn in the next class.

The Instructor (Chef) was?: Chef JP really set the dynamic of a fun loving atmosphere. He's light-hearted humor mixed with his vast knowlege made the class entertaining and informative.

The atmosphere was: For the most part everyone seemed to have a good time. There were quite a few serious faces in the crowd...diligently studying every move...every ingredient. I think if everyone would have taken advantage of the "bring a bottle of wine policy," it would have lightened up the atmosphere a bit. More vino!

Complexity of the information provided: The inital set of recipes we were given are not only useful but quite easy to follow. Most importantly, I appreciated the fact that all the ingredients utilized are readily available at the local grocery store and there was nothing required that one would have to obtain through a specialty retailer as some recipes can often require. As well, I found it very efficient that a lot of the ingredients are available to purchase at the school.

The Food (or Wine for a Wine) Class: The chicken pesto dish with calamata olives was outstanding. Generally, in reading the ingredients it wouldn't be a dish I would choose to make at home. However, I was really pleasantly surprised at its amazing flavor and can't wait to make it for family and friends. I love when I'm introduced to something that surprises me.

The Skills that you learn were: I really like the fact that Chef JP was able to share with us great ways of doing things in the kitchen that are easily implemented into my kitchen routine. Everything that he showed us was simply a better way of doing a lot of things that we already do in the kitchen. I realized after many years of spending hours in the kitchen I've been doing it improperly. It's great to now know the proper way and why. Even after one class I feel I'll be much improved and efficient when I'm cooking.

Would you come back: There were a lot of laughs to be shared and the time fly by. I really didn't know what to expect when I enrolled in the class but I was pleasantly surprised to have the chance to learn a lot of great "kitchen tricks" and enjoy some great food.

The class was great. The only thing that I would recommend would be that you provide more tips on skills in the handouts. I learned so many different skills but I was rushing to write them down and missed some. For example, you could include in the handouts the proper way to peel tomatoes, how long you should cook garlic, or what knives are used for different purposes. Thanks.

The first class was great, a true introduction to cooking. Every thing from basic knif skills to sauces and stocks. While many students don't know the difference between a ""sweat" and a "saute" the class reached all students on many levels so we came away with some great things regardless of kitchen experience. I would make two suggestions. First, the counter looked great with the big bowls of veggies for the chicken stock. They stayed there all class long and blocked us from seeing your hands while working on the cutting board. Yes, there is the overhead mirror, but if you put the stock together first, then we could actually see your knife technique. It would have made a great difference. Second, I purchased your Cooking 101 book when I signed up. You should make it mandatory for the class. It would give everyone a basic vocabluary and familiarity with the cooking terms and techniques, and would allow you to reach a little deeper into the cooking. The book and videos are just that good, that they give a firm foundation to work on in the classes. I am looking forward to the rest of the classes and Cooking 201!

I have been dreaming of taking cooking classes for the longest time and finally I have the opportunity to attend. I wouldn't choose a different school. Chef's knowledge is fabulous. I was a regular at the Left Bank and still the flavors of his food ring in my head. He is a staple within our community and this is a fabulous opportunity for me to expand my knowledge in the kitchen.

I am looking forward to the next four weeks of classes. The chef has such a fun & enjoyable time plus he is always happy & smiing. I only wish that I knew about this school years ago. My goal is to take EVERY class the school offers (SOMEDAY in the near future). I know I am DEFINITELY considering Cooking 201 in March!!! He makes things seem so easy when he does it. With three small children, mealtime sometimes becomes part of the schedule rather than a meal to enjoy. Chef Jean Pierre also asked to educate our palate with the flavors and textures of the food. My husband and I expected to enjoy the class, but both of us walked out exclaiming, "Wow!" We learned even more than the basics we expected from the side comments and explanations that Chef continually provided. Previously, I had never particularly cared for cooking; I got the job and fed the family over the years, but thinking of what to cook day in and out seemed onerous. Now, however, I really feel excited about cooking. Chef's emphasis on basics and a few ingredients makes planning meals fun and creative. We're hooked!

We laughed, we cried-while chopping the onions, and most of all, learned that we really could cook very well by learning some basic fundamentals. Chef Jean Pierre demystifies the art of cooking, and is wonderfully encouraging. Even the most timid cook will walk out of the class with new confidence, and eager to try the techiques and recipes learned.
