This is the 3rd time I have attended a class taught by Brian. The appetizers before class are a wonderful treat, easy to make and so yummy. Brian makes fantastic food and is so accomodating to the class in answering questions and making sure everyone understands what he is doing. I can't wait for his return.

Would have been very hard to improve on this meal. We were very impressed on the use of two sauces on the veal scallopini. It not only looked good but provided a layer of flavours that complimented the veal nicely. All in all, a delicious meal.
Additional comments and observations
Since this is still a class room environment I think it would have behoved the host and the chef to have provided the recipes in print. Many of the folks in the class do in fact go home and attempt to prepare the dishes themselves. Oh well, just a thought, didn't detract from the meal at all.

Please have the recipes printed for the audience. Having to quickly write down the information became difficult and I think took away from the experience.

The atmosphere was: too much wind from the AC on the back of my neck

Complexity of the information provided: I don't pay to learn things that are easy. I already know those.

The Food (or Wine for a Wine) Class: Would love to be emailed the recipe for the pear/cranberry salsa or bruschetta, which was served on toast

The Skills that you learn were: This is my favorite restaurant dish in Fort Lauderdale and I was thrilled to learn its preparation.

Would you come back: Wish someone from Casa D'Angelo would be there before we leave for summer

I am looking forward to the renovations you are planning. It will be nice to eat off a table top again (I remember my Fresh Market evenings). I would also have liked the printed recipes for the appetizers, asparagus, and the sauce for the fish.

The Food (or Wine for a Wine) Class: I loved the appetizers at the beginning of the class. Thanks for recommending toasting the pine nuts. The recommendation was well received by Chef Rutherford. We never stop learning from each other.

The Skills that you learn were: I had never thought of breading only one side of my fish.

The atmosphere was: it was a great group, a great class, great all around

Complexity of the information provided: as long as we have the recipies, they should be ( and I can borrow Bradley ) super easy.

The Food (or Wine for a Wine) Class: everything I ate was excellent. I'm sure there was quite a few of us who wanted to lick our plates. Diet be you know what !!

The Skills that you learn were: can't wait ti do the eggplant appetizer, the meatballs & ricotta AND that fantastic flourless cake. One of the best I've ever had.

The atmosphere was: What a way to start the evening when the CHEF BRIAN treated us to appetizers!! The rest of the evening was delightful.

The Instructor (Chef) was?: Brian is the 3rd "celebrity chef" with whom I've taken classes with you. I think he was the best. Certainly the busiest! It's a good thing you didn't take the night off. He needed 2 sous chefs!!

The atmosphere was: You have a great way of connecting with us & Brian blended in perfectly.

Complexity of the information provided: But, I won't know until you send me the recipes & I can try them out for myself.

since this is already classroom style, change the chairs to chairs with small table tops to facilitate wine glasses, food and note taking.
