I feel I learned so much. Chef Jean Pierre was so careful in showing us new techniques and making sure we know in how many different ways we can use them. With each recipe we got so many tips and so many variations! This course was such a rich experience, fun and so very useful. Chef Jean Pierre is great fun and his food is simply amazing! He is a perfectionist, you can learn so much from his attention to detail. Also, a special note for Bradley and Luanne (I hope I spelled their names right) - they are both wonderful and very attentive, enhancing the experience every time. i can't wait to take another class!

Provide a rational for the school's preparation techniques. Many "cooks" have been taught at home or developed their own preparation techniques through experience and they may be completely different from those being taught by Chef Jean-Pierre.

The Chef does a great job. Perhaps some instruction on picking vegetables and fruits/herbs, etc. at the grocery store would be good. Things to look for or how to tell if something is ripe or getting ready to go bad.

The 201 series was very informative. I would be interested in the new "301" series so if you could give me a heads up when the class is set I would appreciate it.

Would you come back: This class was exactly what I was looking for! I still cannot believe that I was there for three hours without becoming bored or restless even once. I learned several things that I will definately apply to my cooking and really look forward to the rest of the classes!

The classroom experience was very good. For myself personally I would like to have the Chef give altenatives to recipes when mixing dairy with meat or chicken, so that I can apply them. (such as using vegetable broths instead of chicken broth in a dish that is mainly dairy) I keep kosher. This would also be useful for vegetarians.

This is the first class in Cooking 201. I wanted to learn skills, not just recipes. Chef JP delivered everything and more than I expected. I will anxiously wait for the rest of the classes!

The atmosphere was: Everyone was laughing so much it was hard to hear the recipes sometimes!

Complexity of the information provided: While these were simple recipes but they all tasted AMAZING!

The Skills that you learn were: Onion confit, sun-dried tomato bread crumbs, goat cheese polenta.. WOW! I learned cooking skills, not just recipes.

Would you come back: The class lasted almost 4 hours, and went by so quickly, I couldn't believe it. A really great time.

Class number 1 was awesome and far exceeded my expectations! Amazing useful tips especially regarding the freezing of garlic puree, onion confit and pesto paste! Looking forward to the rest of the series!!

The Instructor (Chef) was?: His funny, sarcastic nature totally make the class!

The atmosphere was: Love the kitchen and the way you can see everything no matter where you are in the room. Also, very welcoming, casual and comfortable.

The Food (or Wine for a Wine) Class: From some of the ingredients, I wasn't sure I would be a big fan of all the recipes, but, they were all amazing! Specifically, I am no so crazy about Goat Cheese and am not a big fan of nuts. The Polenta was the best I have ever tasted...chef you were right!!!

The Skills that you learn were: I saute and carmelize onions all the time...but now I know the right way to do it!! The freezing of the onion confit, garlic puree and pesto paste will make life so much easier!!!! Thanks for the tips!

The Instructor (Chef) was?: Chef Jean Pierre, as always, keeps the class entertained. He entices us with his wonderful recipes; heaven for the taste buds, and his sense of humor never fails to emit the sound of laughter. Chef Jean Pierre rocks!

The atmosphere was: The people in this class seem like a nice lot, and were very sociable. Chef addresses everyone in a friendly manner.

Complexity of the information provided: Most of the recipes seem very easy to follow. There was one that was not complicated, just a bit more time consuming.

The Skills that you learn were: There were very helpful tips in this class.

This class was my first time attending and what a pleasant surprise! My husband and I thoroughly enjoyed. We didn't take Cooking 101 since I am more experienced and he is more of a beginner,. We thought this class would be more appropriate. It was easy enough for him to understand and offered many new tips for me. We are looking forward to the next "sampling of delicious food" and are excited to add new skills to our cooking repetoire.

As Always, the class was a lot of fun, I love Chef Jean-Pierre's sense of humour, the recipes and the delicious food. This Friday we made the Scalloped Potatoes, Filet Mignon and the Perigourdine Sauce - delicious and we got raves from our dinner guests!

Cooking 201 is another wonderful class and a hit. Chef Jean Pierre shares new techniques as well as, new recipes, and does so while reviewing what we learned in 101 and building upon that knowledge. It never fails to amaze us just how much we learn in each class!

The Instructor (Chef) was?: Not only is Chef Jean Pierre entertaining and funny, but also, an amazing teacher and mentor. He continually encourages those in his classes by saying how easy it is to cook, but his instruction really does make it easy. Recipes that sound so complex are de-mystified, and French cooking techniques are made simple by his explanations. In 201, he reviews the techniques learned in 101 as he teaches something new, and points out opportunities to experiment and be creative with the skills we are learning. After slavishly following recipes to the letter, this is a whole new world of cooking for us! But, it works--we have not only made the class recipes, but tried some variations that came out wonderfully well.

The atmosphere was: 201 students know Chef Jean Pierre's teaching methods work; the questions fly fast and furious, and everyone is eager to be the first to sample the night's fare!

Complexity of the information provided: The recipes look so amazing that it's hard to really believe that they are straightforward and easy to do-but they really are!

The Food (or Wine for a Wine) Class: Incredible!

The Skills that you learn were: The skills we have learned in 101 and 201 really have changed how we cook in our kitchen--and it's changed what used to be a chore and looked upon with a bit of dread after a long work day, into a highlight of the day. Cooking is easy and fun the way Jean Pierre teaches it.

I enjoy watching Chef make food and the best part is he always tells us other ways to use an ingredient, so that we get many other meals... since we are freezing everything for 6 years anyway!
