Since people come in pairs in may be a good idea to have tables that seat 4 across.

Additional comments and observations
Had a great time with my mother. We both loved it and the food and look forward to trying to make those dishes. I'm a big believer in Organic foods so any organic foods used should be announced.

Absolutely nothing! The new classroom is amazing, the best anywhere...really enhances the learning/dining experience.
This fish class was just simply excellent.

Additional comments and observations
a)your mashed potatoes are fantatic and all agree. I think the lady last night prefers the wall paper paste style typical at Trulucks, den of mediocrity.
b)the numerous tips you give during class are invaluable
c)any time i make your meals for guests. they rave & you are accorded full credit!
d)would you consider sessions of rustic peasant style dishes beyond what you currently already provide...with perhaps cabbages, cabbage galette?/dishes incorporating beans/etc.
and a class in Pissaladiere or Flammenkuche...the savory Alsatian type of flat bread tarts that one can put so many various toppings...yum!
