Wonderful evening! Our third time, and will return for a Valentine's Day dinner on Feb. 13. Every time, I get great cooking tips (i.e. garlic "ice cubes", and cooking my rice in stock, how to split and tie a whole tenderloin).

This was the third class I have taken from Chef Jean-Pierre and perhaps, the best ever. The beef tenderloin and spinach souffle were extraordinary! Comfortable, intimate, informative and fun, Chef Jean-Pierre's Cooking School makes for a great evening out!

I truly enjoyed Chef Pierre's cooking class. We were all given the complete recipes with instructions of every dish on the menu. What impressed me the most was how open Chef was in sharing his knowledge, answering questions and giving suggestions and tips. I left with a wealth of information. We were served a 3 course dinner which was divine. All of the dishes were light and I could taste all of the ingredients. It was a pleasure to eat.
I bought Chef's cook book Cooking 101 which came with 5 DVD's. My husband (who does not like cooking) sat and watched 3 of them with me. He loved them so much he offered to help me cook the recipes. The last time I was this inspired to cook my mother had offered to share our family secret recipes.
The class was just plain fun, I look forward to sharing this experience with family and friends in the future.

The chef, food and instruction was above my expectations. The food was so spectacular that it ruined any future food experience that I could have at any restaurant!Will definetly return.Can't wait to use my vinegar on a nice salad and will return to purchase other flavors.

I am all about constructive criticism, but I can't think of anything "negative" to change. This was my first class and I thoroughly enjoyed it. I was worried about coming by myself, however once I arrived, everyone was so wonderful that it didn't matter!

Everything in the "Emporium" is excellent quality - the Diamond skillet I got is the best money I could have spent! You guys just get better and better.

The Instructor (Chef) was?: When you could hear him. The atmosphere was: VERY VERY Cheerful. Complexity of the information provided: Really hard to tell, too much frivolity going on. The Food (or Wine for a Wine) Class: Frivolity didn't affect the taste of this food. The Skills that you learn were: Didn't come to learn and that was a good thing. There was far too much partying going on to learn anything. As you know, "If you obey all the rules, you miss all the fun". Well, nobody missed out on any fun last nite. Would you come back: You'd have to be crazy not too. As a matter of fact, I was there for the morning class on Pizza.

The Instructor (Chef) was?: Always a joy to watch him. Again it appeared that Chef Jean Pierre bit of more than he could chew at the beginning of the night, But he pulls it off with two minuets to spare. Tenderloin laid on a svelte and subtle Madeira sauce that leaves you wanting along side a stout spinach potato and goat cheese soufflé .The corn potato “pancake” with salmon was a pleasant blend of texture from the lightly crusted exterior to the semi smooth home fried center. As always the flavors are well balanced and hushed in that each bite reveals another aspect of the ingredients. The atmosphere was: Of course we come to enjoy ourselves at Jean Pierre’s, but in the end this is a demonstration of cooking technique held at a school. There was a lot of chatter and banter last night better suited for a monster truck rally than a lesson in cooking. A little more “sit” and “sat” and a little less “chit” and “chat” is the respect the Chef deserves. Complexity of the information provided: This class was free!…If you follow his advice in buying a whole tenderloin and butchering it at home. As you learn is his 101 class, Chef Jean Pierre was a butcher very early on in life, so having him demonstrate the seemingly complex preparation of a whole tenderloin into three roasts is a rare and valuable insight (pun intended). By butchering it at home you save $60.00 off of the cost of individual Filet’s and get a free 3 lb roast as well. That is the cost of the class, and then some! The Food (or Wine for a Wine) Class: Desert is a delight at the end of the meal. A slightly sweet surprise designed to lift the mood of the table to a place where the conversation lightens and the bill gets paid. Unfortunately in many restaurants deserts have become instead, sugar bombs, void of any distinction designed to annihilate any hint of flavor from the previous fare. Here again the chef reeducates us as to what a dessert can and should be. His whiskey bread pudding combines a bold, rich chocolate exterior of chocolate crust with a slightly sweet smooth warm whiskey interior deep in flavor. There is an edge to the flavor that could best be described as “adult”. If it were a city it would have been; Berlin by night. He claimed it would be better with rum, and that this was his last Whiskey bread pudding-I’m glad I had the chance to taste it while it was here. The Skills that you learn were: The techniques taught are ongoing in each class, designed to instill confidence in the home chef so they can expand out in the kitchen. The Zabaglione and it’s creation was as good illustration of this in that it needed to be worked with a little to get it right. Watching his efforts in building the delightful topping helps the home chef understand how to adapt to the foods reaction as it responds when preparing it. Would you come back: Home Chefs are truly lucky to have this resource here in Ft Lauderdale- If one is serious about cooking they should take advantage of this school.

Provide food in increments. Over two hours of instruction was too long with only wine for many of the audience members, who were getting louder and inattentive as the evening wore on. Also, prepare some more of the items in advance to ensure time is well managed. Lastly, I was less impressed to hear of corrections to the recipes and future improvements. Testing of the recipes should be completed prior to sharing them with a paid audience.
