I am glad to know that you are expanding and the new kitchen will have space for tables. Everything else is first class as you and your gracious staff.

The Instructor (Chef) was?: I love learning from a true professional. Chef Jean Pierre is my favorite. I always go home, invite my family and make the entire menu. It is easy. I so wish I had Bradley to work along side with me that evening.

Complexity of the information provided: Chef Jean Pierre explains everything and his information is very clear to understand.

The Food (or Wine for a Wine) Class: Excellent menu. The snapper was outstanding as was everything else. The beef to perfection. I will be making the chocolate dessert this week. Need to go to Home Depot first.

The Skills that you learn were: How to caramelize onions his way and they were so sweet. To tie a roast was so simple. Not to be afraid of chocolate ganache. Fabulous and simple.

Would you come back: Look forward to another evening. Do not want to wait another year this time. Must do this more often. Please let us know when your wine is ready for sale.

I know you are expanding to include dining tables which will make the experience much more romantic. Also, selling wine on site would be helpful as part of the session to pair the meals with the best wines.

The Food (or Wine for a Wine) Class: Magnificent. I don't usualy care for fish, but the meal was wonderful and delicious.

The Skills that you learn were: Chef Pierre makes it all look so easy. It does seem about having the right materials, developing a method that works best for you and HAVING FUN!!

Make sure your ovens are turned ON and preheated before you put something in to bake. Didn't you learn that from your mother?? Only a joke to my good friend Chef CP.

Would you come back: The food was very, very good. Excellent combination! Normally there would be a lot of talking in the back ground, but with "couples" there was very little distraction from noise, which is great because we come to learn how cook. The sauce for the snapper was outstanding!! Nancy and I will definitly be back again. (The cookies were pretty good also,) Too bad you're on a diet!!

The Chef needs to open a school in the Pembroke Pines/Weston area so we don't have to drive so far. I would love to see smaller classes and advanced courses for people who cook on a regular basis.

The Instructor (Chef) was?: Chef Jean Pierre was so much fun. He made everyone feel comfortable as if he already knew us all. He shared wonderful personal stories and interjected the cooking experience with funny comments and jokes.

The atmosphere was: The class was just the right size to be able to communicate and have good interaction.

Complexity of the information provided: There were many recipes made but for those of us who cook on a regular basis it was perfect. It kept us engaged and not too simple. Chef Jean Pierre made it all seem very doable.

The Food (or Wine for a Wine) Class: Everything we ate was spectacular!

The Skills that you learn were: In addition to the recipes, I loved all the tips the Chef gave us to use in our everyday cooking.

We did not eat till 9:30. If there could of been an appetizer ready earlier that would of helped hold us over while we watched the cooking demonstration.

The Instructor (Chef) was?: Jean Pierre is a showman. He has a wonderful sense of humor. My husband and I both felt he was as good as a cook as he is an entertainer.

The atmosphere was: I noticed I was smiling almost the entire night!

I suggest a few audience participation moments and maybe a strecth or two of the legs and back. My class lasted from 7:30pm to almost 11:00pm.

The Instructor (Chef) was?: Merci/Grazie Chef for letting your personality come through in the kitchen. You come across as passionate about cooking and your overall joie de vivre was a constant reminder that we should ENJOY cooking and not stress over it. I particularly like it when you refer to dinner parties because that's a great way for a student like me to try the recipes we learned. For the record, I did this once already with decent results (I was my harshest critic, naturally).

The atmosphere was: Crowded but a good, diverse group. Everyone seemed to enjoy the class and that spirit is contagious.

Complexity of the information provided: I am a new to cooking so nothing is Easy or Very Easy just yet, but I press on!

The Food (or Wine for a Wine) Class: Chef Jean Pierre has an incredible talent in using ingredients that are available anywhere and combining them so that each contributes to the overall taste (and presentation) of the dish are BALANCED. For example, the shrimp and crab sauce for the snapper provided a sequence of flavors (butter, cream, shallots, shrimp, crab, cognac, and lastly Thai hot sauce) none of which dominated the palate. It was a thoughtful and intriguing mosaic for the senses.

My husband said it's too bad there's not enough room to expand for tiered seating with a narrow table in front of each row. I would suggest adding an "Ask the Chef" section on the website where you write a column answering questions people write in about. I always have questions after I try one of your dishes at home.

The Instructor (Chef) was?: Chef Jean-Pierre is not only a great chef, but a natural-born teacher. His enthusiasm and humor make his classes informative, inspiring and very entertaining.

The atmosphere was: The concept of a "couples only" class made for a fun, romantic "date night". I was so excited when my husband suggested we sign up. He got totally into it with his selection of a French champagne and cabernet to complement the menu. Everyone seemed to really enjoy the evening.

Complexity of the information provided: The chef makes everything look relatively simple as long as you prepare each ingredient in advance and have all the right tools.

The Food (or Wine for a Wine) Class: Unbelievable!!! The tomato and goat cheese pie was amazing and will probably be the first thing I try at home. The crab and shrimp sauce took the yellowtail snapper over the top. I loved learning the technique for couscous, but it was not my favorite. Then came the beef tenderloin with asparagus timbale and roasted sweet potatoes. The filet was perfectly cooked and the brown sauce was delicious. (I would leave out the blue cheese.) I will definitely experiment with the asparagus/corn timbale. What great flavor! The apple tarte tatin, seemed time consuming, but was worth it and a nice finale to a perfect dinner.

The Skills that you learn were: All of these classes are packed with useful tips and techniques. This class included a great lesson in trimming a beef tenderloin and making into roasts. Then we learned several caramelization techniques for onions, tomatoes and apples. I never would've thought of preblanching and caramelizing onions and freezing to have them on hand. All the shopping tips are great, too, as well as, tips on what steps can be done in advance for a dinner party.

Would you come back: I can't wait! My husband thoroughly enjoyed it, too.

The Instructor (Chef) was?: Chef Jean-Pierre is always so enthusiastic about his work that his love of cooking is contagious.

The atmosphere was: We have attended several classes and always have an enjoyable evening.

Complexity of the information provided: The recipes aren't intimidating. I've tried several at home with excellent results though obviously not as good as Chef's.

The Food (or Wine for a Wine) Class: The dishes are mouth-watering and the sauces are to die for. The presentation is first class and you learn the tricks to make meals at home more appealing.

Would you come back: My sister-in-law and her husband were visiting and we always take them out to dinner. We wanted to do something different so we brought them to the class. It was a fun, and unique, way to spend the evening. We all had a wonderful time - good food, good company and a warm, relaxing atmosphere.

Would you come back: I/we hope you continue to do the couples class. I have been coming to your class for 6 years and this was my favorite. I loved having my husband with me and the food you made last night was so sexy and delisious. We can't wait to do another one together. I was way better than just sitting in a resturant.
