I now know that the process of making macaroons takes a while but I still think that some more emphasis should be directed towards the fillings. Maybe use Chef's macaroons, possibly made ahead of time, to demonstrate different fillings during the downtime of the students macaroons baking/cooling.

Before the class I couldn't even spell "macaroon". Now that Chef Vizcaino has imparted his pastry making knowledge and expertise I have the skills to create this delightful French pastry called the macaroon. I don't think Laduree or Fauchon has anything to worry about, at least not until I practice a bit. Great class!!!
