Please give consideration to using a 'hands free microphone', or talking about expected behavioral 'norms' at the very beginning of the class. Over the years, 'best practices' have included professionally setting expectations around behavioral norms at the outset of accountability) ...there have been more than a few times when the crowd noise from 'some small groups' merely there to party vs. learn really distract from the whole experience. I will say JP that you do an excellent job walking that fine line between not being too heavy handed / and politely bringing attention back to the front of the room .... We'll never fully eliminate this behavior, as it is systemically a byproduct of poor breeding combined with a lack of parental guidance during one's formative years, which result in a self-absorbent mentality.

The Reggiano Polenta Souffle alone was worth the price of admission! The inside tips on how to prepare fish the way the pro's do was much appreciated. The creation of the individual shortcake deserts with Grand Marnier brought this well known ending to another level. An evening with Chef JP is always a delight, his personable teaching style always has us walking away with new ideas and techniques to try. If you like to cook and really would like to feel like a master in your own kitchen, this is the place to begin taking the steps to make that happen.

My only regret is that because I do not live in Florida I can not attend your classes more often! But, I will be back as soon as possible. Thanks for a fun evening..
