The Food (or Wine for a Wine) Class: I really thought that the chicken carbonara was a first place winner tied with the cheesy fettucine ..... until I tasted the pappardella. The cherry tomato sauce was heavenly. I can't wait to cook all three. Yes, I will also make the pancetta sauce for those spicy people in my life.

The Food (or Wine for a Wine) Class: all dishes had wonderful flavor. the sauces can be used for more than just the dishes prepared which will be helpful since a new member of our family is a vegetarian and we are working to meet her tastes without meat.

The Skills that you learn were: we use garlic in many dishes and the tips for more flavor was very helpful and getting a better understanding why certain items are used in recipes clearly makes more since and certainly changes the flavoring.

Continue to coach audience as to how to determine when pasta is ready, not overdone or under cooked. This has been my dilema in the past.

Step aside Chef D'Angelo, we have a new Italian chef in town. Well maybe only half Italian !!! Great carbonara and cheesy fettucine. Most carbonara has a base of bacon but the chicken was a good ingredient. The cookies were pretty good also.

The Instructor (Chef) was?: Having just retired from a 42 year professional career where I had yo take Continued Education classes each year to keep my license current, I have learned that to be in a class where you are "entertained" while being taught serves to heighten the experience and certainly makes the "class lessons" not only more interesting, but much easier to retain, information wise! Besides, life is way too short to take every munite of it so seriously! Laugh a little! Enjoy it!

The atmosphere was: Very laidback and easy going! Might be a good idea to quickly go around the room and have everyone introduce themselves by first name to "friendly it up" a bit more? (Maybe thats too time consuming???)

Complexity of the information provided: Enjoyed the "variety" offered in ways to make small changes in each recipe and still "make it work".

The Food (or Wine for a Wine) Class: Portions served were very generous! Gotta make sure you "fast" before going to these classes!

This was my first experience, and I'm afraid that I wasn't sure whether I would actually cook myself, or if I should have had dinner first because the starting time was 7:30. It would be helpful if the website stated that we would have the opportunity to sample several dishes (we wouldn't have eaten dinner), and I would have known that I wouldn't do any cooking myself. I am from Ormond Beach, and would love to attend another class whenever I am in the Fort Lauderdale area.
