Ralph Pagano is extreemly talented (as evidenced by an appearence on Iron Chef) chef. His ability to cook and prepare tasty dishes was evident in everything he served. As good as all that was, we felt that where he really stood out was with his gift to gab. He talked the entire evening and included everybody in the audience. He was very interesting to talk to and learn from. We're already signed up for his next appearance in December. Merry Christmas to us. JP Thanx for having Him.

The Food (or Wine for a Wine) Class: The food was superb. His sauces were amongst the best we've ever had.

The Skills that you learn were: He discussed a few things dealing with food chemistry i.e. the acidity of reduced wine which helps hold sauces together.

Would you come back: One of the most enjoyable evenings we ever had.

Very interesting night. SIDE COMMENT: JP, I think with the economy in the shape that it is, that you should launch a series on "how to cook great food on a budget". You could market it once per week and feature inexpensive products (chic, veg, etc.). Keep the fee lower - in line with the cost of the dinner. This would be great to get new attendees and those that have had to reduce their entertainment budgets. Bob Lowry

This being my first class I did not know what to expect. It greatly exceeded my expectations.The evening was well organized with a good mix of cooking recipes,technique and social interaction( afterall that is why many family traditions start in the kitchen). I will definitely take more classes and am hopeful that Ralph will come back again.

The atmosphere was: There was alot of laughing and excitement during the class.The time went so fast.

Complexity of the information provided: Reciped were easily recreateable in a home kitchen.

This was a lot of fun! Ralph is a BLAST! I yearn for the pop overs....

The Instructor (Chef) was?: I absolutely would come again to see Ralph. He was extremely entertaining.

The atmosphere was: I was a little hesitant about making comments or asking questions, everyone seemed to know one another, and I was a newbie.

Complexity of the information provided: I would have liked to see him execute more of the recipies vs. just talking us through it. I learn better if I can see it being done.

The Food (or Wine for a Wine) Class: I'm not sure if the menu we had was the menu I signed up for-- I don't eat beef so I did not have the main course. I wouldn't say the food was good- it was very good- or better, but I wouldn't quite call it succulent.

The Skills that you learn were: He flew by some things that I would have liked him to go back to- he had soooooo much information, but at times, for skills, it would have helped if he slowed down just a bit.

Would you come back: Way fun! I really didn't know what to expect. I've already recommended it to my friends. I came up Miami (over an hour away) and I was not disappointed in the least.

You didn't even have to like to cook to enjoy this class. The entertainment level was off the charts. I loved the stories as much as the recepies. Chef Pagano outshines all those TV chefs. Personality plus.

The Instructor (Chef) was?: I hated for the class to end. I wanted to hear more stories and more receipies.

The atmosphere was: Big improvement over my last class where it was too noisy. Last night was fun and entertaining. The classmates added to the pleasure.

Complexity of the information provided: I can make this at home. In fact the entire menu is my next party menu.

The Food (or Wine for a Wine) Class: Best gazpacho, best polenta, and best short ribs I've ever had.

The Skills that you learn were: Chef made learning easy. I never realized how classically trained he is.

Would you come back: Best night out in months. Didn't want to go home.

What a great opportunity to learn from two wonderfully skilled and delightful human beings. I wil never look at another chinoise without a chuckle.

The Instructor (Chef) was?: Ralph P is the best of NY and the best of culinary expertise rolled around a man with a passion for food, people and laughter. What a delight.

The atmosphere was: Ralph created an atmosphere that allowed people to laugh and to learn and to enjoy.

Complexity of the information provided: The recipes were not difficult as long as you have a sous chef to chop. Seriously the recipe were designed for the home cook and translate easily into the next summer party.

The Food (or Wine for a Wine) Class: The Gazpacho was so alive it vibrated. Who knew how good scallops could be?

The Skills that you learn were: His garlic technique was worth the price of admission. And the presentation on each dish was excellent.

The Instructor (Chef) was?: Chef Pagano was such a natural entertainer. He seemed very comfortable in front of a crowd and didn't miss a beat.

The Food (or Wine for a Wine) Class: The best short ribs I've ever eaten.
