Figuring out a way to have better management or control over exceptionally loud, boisterous, and inconsiderate fellow attendees. See below.

We've attended the Cooking School perhaps 8 times. This time the food was among the best, or perhaps the best we've ever had and it was spectacular! However, this wonderful experience was somewhat tempered by an extremely noisy group of attendees, on this particular evening comprising mostly women who apparently didn't know how to act in public, despite CJP's efforts to try and contain them on at least three occasions. We were sitting in the last row and the noise was so loud it often made it difficult to CJP at times. In fact, a single gentlemen sitting beside me and who was attending his first Cooking School class remarked more than once than he couldn't hear what CJP was saying at all. Very disheartning for a first time attendee, needless to say. Fortunately, we've had many more wonderful experiences over the years and realize that the annoying behavior of others last evening was certainly the exception and not the rule. We will most definitely be back!

Having some small munchies like nuts or pretzels at the tables might have been a good idea. It was quite awhile until we actually got to eat and everyone was starving!

I would have appreciated more information on creating the rich beef stock used in the escargot recipe. More information was referenced but unfortunately, time did not permit. Also, the chairs have a rather abbreviated 'sit' time and aren't very comfortable after about an hour.

It's very convenient to attend the class then have the opportunity to shop 'Isle #3' for the specialty ingredients used to create the demonstrated (and delicious) recipes. It facilitates re-creating the dish at home without having to hunt around for ingredients at varous markets. LeAnne is always helpful in procurring additional quantities as the items sell quickly. Also enjoy having Chef JP available after the class. Love his charisma, style, and enthusiasm.

Keep the same things that you have been doing. This is the second time that I have been to this particular class and I learned many more things this time. Chef Jean-Pierre continually is improving his recipes and telling the class so many tips that cannot be learned on your own or through books. Last night's class could not be better. Everyone at my table was raving over the class and the food. One person at the table is not really interested in cooking very much, but had some much fun that he is coming back again for another class.

The addition of the new room for the class as well as the area for sampling special olive oils and spectacular unique vinegar is a real plus for the school and the students that attend the classes. You also learn so much about cooking implements and knives and how to use them makes the experience very worth while.

The Instructor (Chef) was?: I have been cooking and taking cooking classes for a long time. I always lean new ways of doing things. You taught me a lot.

The atmosphere was: You did wonderful job considering the couple of people in the back that had not eaten all day and had more then enough to drink before the class started and thought there job was to talk the whole time.

The Food (or Wine for a Wine) Class: I can't wait to try the recipes. My husband can't wait to make the escargot, they were the best. The steak sauce was great! The chocolate mousee was to die for. It was wonderful. And above all I know I can go home and do it.

The Skills that you learn were: You always surprise me with information that I never knew of. One example how to thicken a sauce using a strainer in the pot.

Would you come back: When ever we get to Florida, you are our first stop, even though we love the beach. My husband and I can't wait to get back.

The first class that I took had about 20 students. The second class had 27. I prefer the smaller group because the noise level was too high in the larger class. I felt more comfortable asking questions in the smaller group. Another suggestion would be to have classes divided into those people that pretty much just want to eat and drink and those that are more serious about cooking.

It was like a date night . We shared a bottle of wine, enjoyed the company of the other class members and of course enjoyed the wonderful dinner. The sous-chefs were wonderful too. Can't wait for another class.

The atmosphere was: My husband and I had such a great time. He never cooks and I think this sparked his interest. He'll be back for another class

The Food (or Wine for a Wine) Class: I have never eaten escargots but these were irresistable. The sauces for the escargots and meat were to die for. The mousse was the best.

The Skills that you learn were: Especially enjoyed learning how to cut and clean the meat of its fat and bluish film. Also sauces are hard for me and they made it look so do-able.
