The instructor was: Love the banter with your staff! Love that you do not pre-measure and are that your methods are not obsessive but are casual and relaxed when appropriate.
Complexity of the recipes: Wish the recipe sheets were less crowded so it would be easier for me to add those great tips, etc.

The skills you learned were: Love that you suggest and introduce equipment that is new to me but add that it is not necessary so recipes are more user friendly but challenge me to expand my tools and techniques.
