The atmosphere was: The facility is excellent, I had great views of food preparation, using the microphone made it east to hear.
Complexity of the recipes: Bonnie uses most of the same procedures I learned as a restaurant professional for twenty years. You can teach complexity yet be able to tell students short cuts of simplifications they can practice if they prefer.
The food was: I loved the salad, braciole, and risotto
