I really enjoyed the evening. The only thing I wish Nick had addressed--right at the outset--was how to work successfully with yeast and how to create an environment in which dough will rise, and possibly the subject of bread flours as well. Thankfully, Carol addressed these topics when I asked her as an aside. It may have been that the other students came with backgrounds in bread baking already, so this was not something about which they needed/wanted to learn.
