The class was shorter than usual (less than 2 hours) and I think we would have had time to make one or more of the tempura, soup, salad, dessert and/or do some or all of the knife work ourselves. Demonstration and a little practice getting the uniform sized pieces that work best in sushi would have been good. I would love to have had a list of the names and combinations of popular sushi rolls in our packet. I'd also have enjoyed the recipe for the great red dipping sauce Pam made, and I wish we had made our own sauces and talked a little about proportions for soysauce, wasabi, and any other possible sauces. Class was a lot of fun, I was stuffed, and I got to bring home enough for my family to enjoy too! |
